I'm used to making my Pinto Beans in the slow cooker with just a ham hock and salt and pepper. This is soo good! My husband loved them, and even my 9 month old was trying to reach for our spoons! (NO we did NOT give him any! lol My husband said this was his new favorite bean recipe of all time and I must admit I agree! Easy and tastes like it'd be more work than it was!! This one will become a stable in your newly forming family!!
Erin, I always just put the Ham Hock in "raw" I've always found it to cook right along with the beans! :o

I was wondering if I should cook the ham hocks before I put them in the slow cooker? Or do I put them in raw? If they need to be cooked, how do I cook them? Thanks!

I have been trying to eat "perfect proteins" a couple times a week, instead of using meats/fish all the time--to have a more "whole" and well-rounded diet. I love the combination of organic brown Basmati (or Texmati rice and beans, as it's flavorful and comforting and nutritious as heck. I tried Emeril's recipe for red beans and rice, using pintos and brown rice instead. Very spicy, pretty good. I made my own version, less spicy, not as good. Then, after going past Paula's recipe two or three times, I decided to try it. YUMMY! Easy on the wallet. Wonderful comforting flavors with the ham (I used a half cottage ham from Walnut Creek and brown rice. Wonderful texture. I found Emeril's and mine too soupy, but Paula's is more like the texture of lumpy mashed potatoes, rather than "chili" textured. I top it with chow-chow (purchased by the jar at Cracker Barrel, the only place I have found it here in NW Ohio and raw chopped onion. Mm, good. And easy on the pocketbook, too.

This is awesome! My great grandma used to make pinto beans for me and this takes me back to her kitchen every time. We like extra ham so I often make pinto beans after a ham dinner and toss in the bone and any extra ham in in place of the ham hocks. Mmm

If you are looking for a gourmet or high-brow version of ham and beans, this isn't the one for you. However, if you're looking for a recipe to make good ole' fashioned beans, this one's for you.
I altered the preparation slightly in that I did a speed soak on the beans (rinse/sort, cover with app. 3 inches of water, bring to a rapid boil, remove from heat, cover, let soak for 1 hour and drain. I also didn't prep the ham hock - I just threw the smoked hocks (doubled the amount as we like a lot of meat in our beans into the cooker with the rest of the ingredients...the result...yummy and oh so easy to make!

Tabitha ... beans pretty much take care of themselves. I can't even imagine what could have happened that you don't even have the inspiration to tweak the recipe. Baked beans are a whole different story from fresh beans ... I will say, I no longer like pinto OR black eyed peas ALONE, but TOGETHER, oh my goodness. Just put over a bowl of plain, white rice.

I made 2lbs of pinto beans on the stove top using the amount of chili powder and dried oregano initially asked for. When the beans were simmering, I then seasoned them with the house seasoning... Amazing!

This is not going to be a recipe we repeat. This tasted like nothing but beans. Yes, I get that it is a bean recipe and that is what I wanted, but I also wanted flavor, spice, zest, SOMETHING! This was lifeless and dull. Sorry, it just wasn't enough for us. I'm going to stick to Alton Brown's Baked Beans from now on if I want a pig and bean dish.
Now to find something to do with almost a pound of cooked pinto beans....

I have made these beans at least four times and my husband can't get enough of them. I always forget to add the chili powder and am not sure that'll do anything for us. Think I'll add a good Mexican chili powder if I can remember. Cornbread and chow chow an absolute must for us Southerners. Thanks Paula.
