    This soup is wonderful although, unless you cook a lot, the instructions may seem odd. I made the roux in a small saucepan. After the mushroom/broth/seasoning mixture simmered I used an immersion blender to mince the mushrooms. I then added the cooked roux and 1/2 and 1/2 instead of heavy cream and simmered for another twenty minutes. The color is not too appetizing due to the gills in the portobellos, but the flavor more than makes up for it.

    Best cream of mushroom soup I've ever had, and it was really very easy. Reheated in the microwave really well, too. We couldn't find liquid smoke at our grocery store, so we just omitted it, and it was quite good even without.

    I never thought of cream of mushroom soup as an eating soup, just a cooking soup. This changes all that! The little bit of smoke flavoring adds a depth to the flavors. I did substitute half and half for the cream to lighten it up just a little and a little herbs de provence.

    THIS SOUP IS OUT OF THIS WORLD.....ANYONE AND EVERYONE SHOULD TRY THIS...AND DONT CHANGE A THING....IT IS FOR SURE NOT FIGURE FRIENDLY....BUT PAULA'S FOOD NEVER IS..TRY THIS SOUP

    I have tried many of Paula's recipes and each are very very good. This is no exception. She is a genius. I just happend to catch a few minutes of the show where she made it, and I had to try it. It just so happend that I had everything on hand to make it except heavy cream, I just substituted sour cream and still turned out great, but a little on the thick side. I like my soup thick like paste, so it worked great for me. Yummy, Paula, you are the southern grandma I never had!!! Keep it up!
