This is great with tortilla chips or by itself. And if you use a light dressing, the calories aren't bad at all. This is a staple in our home.

This is extremely addicting!! I haven't found anyone that doesn't like it. Serve with homemade tortilla chips and you are all set.

Future FYI ... once I had to substitute a can of black beans as that was all I had in the house. It has become our new favorite version.

I made this for my family as a new way to serve blackeyed peas and they loved it. I added a few other items such as watercress, and black olives. Then right before serving I added cilantro and crumbled bacon just to give it a little crunch. I also took frozen niblet corn and roasted it in butter until it had a crunch and smokey flavor. Whether you serve it as a dip, side dish or with lettuce as a salad this recipe is great as is or with your personal changes, this is a great recipe. Thank you for this great and easy receipe.

This is always a hit and so easy - I serve it with Fritos and whatever is left over - we eat as a side dish with dinner : Thanks Paula!

I have used t his recipe over and over for about 5 or 6 years! When I saw Paula make this, I had to try it! Healthy, tasty, & easy to make! I have served it at parties, taken it to potlucks, and had it for "just because"! It never lasts long! Thanks, Paula!

That's what my "taster husband" said when I asked him to sample this and comment after it was in the refrigerator for a day. As another person suggested, I added a chopped fresh tomato. I deleted the red pepper because they don't set well with either of our stomachs.

Taking to a weekend in the mountains with friends.... if there is any LEFT !

This is always a hit whenever I make it! I also like to add diced avocado. This ia a great dish anytime of the year but it is really great in the summertime because I can add a chopped "homegrown" tomato to it!!! people may look at it funny at first but once they taste it, they're hooked!

I have made this multiple times and you just can not go wrong. Even if I forget ingredients, or make it at the last min, it is always awesome and people demand the recipe.

One change I always make is using the light Kraft Zesty Italian dressing. I usually use some chopped jalapeno peppers from a jar.

It lasts several days in the fridge and gets better :

It may look weird but once you take a bite - you just can not stop!!
