I made this recipe using boneless/skinless chicken breasts as that is what I had on hand. I also fried them in an electric skillet in about an inch of oil so I guess they were more pan than deep fried. Anyway, the chicken was moist, tender and juicy. It did taste a bit like the Colonel's but way, way, way better! Thanks Paula.

The chicken was really good after you removed the skin and crust. Home seasoning was just to salty. Maybe if you only put 1/4 cup of salt into the seasoning instead of 1 cup it would be ok. Other than the salty crust it had a really good flavor and was very tender chicken.

Tried this recipe this week and it was awesome! Now I've lived in the South all my life and I make pretty good fried chicken on my own. However, I don't normally batter mine because of the heavy taste most southern battered chicken has. This recipe's was light, VERY tasty, and crisp. The only minor complaint I have is that you don't really get the great taste of Texas Pete's hot sauce when it's done. I cheated and drizzeled a little bit of the hot sauce on the finished chicken! This is going to be "my" new fried chicken <G>

I thought this was a great recipe for fried chicken although it could lose some salt say about 3/4 as much.

    Wow Paula,
That was a great southern fried chicken recipe. It was very easy to make and the taste was out of this world.

Would I make this chicken again, you bet I would. Great, great great, if I could give this recipe 10 stars I would.

    Keep cooking, yummy!

The coating was so crispy and tasty. Not to heavy and not greasy. I have three sons and they said "mom this is awesome, you can tear it up in the kitchen!" I also made mashed spuds, fresh green beans and Paula's Strawberry Pretzel Salad! Dinner was a huge hit!
