    I found this recipe to be easy and will be one that I will use for a long time to come. When I made this for my family they ate it quickly and asked for seconds. I am originally from Mississippi and am always looking for a spin to put on fried chicken and this one is a keeper.

    I saw Paula make this fried chicken on TV on her cooking school special and just HAD to try it. I'm a pretty good cook, but this was the BEST fried chicken I've ever made! I also made the mac & cheese and the greens from the same show, they were VERY GOOD also.
    If you are ever in Savannah GA...go to her restaurant "The Lady and Sons" it's a wonderful experience. Cheers to Paula Dean....YOU GO GIRL - LUV YA !

    Paula is a wonderful cook and I love her recipes - including this one. However, true southern-fried chicken uses lard for frying! I learned this from an old southern lady named Camille Glen...You can try the breading the way Paula does in her recipe with egg, hot sauce etc. or:
    Just season your flour with salt & pepper (no egg. Make sure chicken is patted dry, shake in flour, refrigerate for an hour (Better crisp or just use right away. Fry in Lard inside of a cast iron or large solid pan with lid on for 7-8 minutes. remove lid, flip chicken & cook uncovered for another 12-15 minutes. Turn chicken as needed during cooking. You will be very glad you took my advice - there is no better recipe, lard is the secret!

    THIS WAS THE FIRST TIME I HAVE EVER MADE FRIED CHICKEN AND THIS RECIPE WAS ABSOLUTELY WONDERFUL. SO FULL OF FLAVOR! I WAS WORRIED ABOUT THE HOT SAUCE BUT IT WAS NOT HOT AT ALL JUST GAVE IT A GREAT TASTE. MY 9-YEAR OLD IS A VERY, VERY PICKY EATER AND HE LOVED THIS! THANKS PAULA!!!

    Easy to prepare and excellent in taste! In the past I always had to boil my chicken first. with this receipe I did not have to do that and the chicken was done.

    I'm intimdated by deep frying, but this was quite easy. Only put in a few pieces of chicken at a time to help maintain temperature of oil. A thermometer attached to my pot was very helpful. Made my seasoning blend with equal parts salt, pepper and garlic powder and just sprinkled it on chicken to season. Used bone in chicken and also did some boneless, skinless breasts. Golden brown, crispy and very flavorful.
    Some of the big, bone in breasts I finished off in a 350 degree oven because they were a little pink down near the bone. Great recipe!
