I had gotten this from paula awhile back and lost it. This chicken is to die for. So glad i was able to get it back because i won't fry chicken any other way.

Garlic powder is foul. I only use fresh garlic, let it infuse for a few hours into the other liquids before using.

It is truly astonishing that there are people who would use the full cup of salt in their recipe.
People, it is called reading comprehension !
If you are frying a chicken and believe a cup of salt is appropriate, you probably should not be in the kitchen at all.

Excellent. I removed the skin from the chicken, shook on garlic powder/salt/pepper to taste (heavy on the first, used a generous helping of Crystal hot sauce, and fried with canola instead of peanut oil. It turned out beautifully. Crispy and lovely on the outside, moist and perfect on the inside. I may play with the seasonings when I next try this, but this is a super recipe.

Never made fried chicken before but it came out excellent really crispy and I used about 2 T. of the house seasoning. I used tabasco hot sauce, I didn't have a cup of it so I only used 2/3 c. I also didn't have self-rising flour so I used all-purpose flour and for each cup I added 1 1/2 t.of baking powder and 1/2 t. of salt.

"Some of us are not experienced cooks and will use all of it." ..... you used 1 cup salt, 1/4 cup black pepper, and 1/4 cup garlic powder for 3lb fryer chicken? That's not inexperienced... it's inane. This is a solid recipe but I have one suggestion. Instead of two cups of flour, use one cup of flour and one cup of cornmeal. Excellent.

I didn't think this was too salty at all, maybe other people used a bad chili sauce or something? I thought this recipe was delicious, perfect mix of spicy and crispy! Just be careful not to over crowd the pan, that will ruin it!

Please add to this recipe...not to use all of the house seasoning at once. Some of us are not experienced cooks and will use all of it. Had to throw the whole thing away tonight after we took one bite. WAY TOO SALTY. SOOOOOO disappointed!

EXCELLENT! One suggestion would be your approx. heat setting (as I do not have a thermometer. I set it on the medium setting. I also used about 1 teaspoon of the House Seasoning, sprinkled on the chicken and another teaspoon in the flour mixture. I also added another teas. of seasoning salt to the flour mixture. My family really liked it.
As for the previous writer - if you are having explosive diarrhea it is human error of cooking, not the recipe. in regards for being too salty, did you read the directions correctly?
I definitely will make this again as it is fun, easy and good tasting.

I'm a relatively new cook, and this was the first fried chicken recipe I made. My mom and sister make EXCELLENT fried chicken, so I had always been a bit intimidated by the process, as if mom and sis were creating magic. LOL! Anyway, I mustered the courage to try this recipe, and the chicken was great. I've made it several times since, always with delicious results.
I have to agree with Michelle (below: I can't believe that anyone read the recipe and thought they were supposed to use the entire amount of Paula's house seasoning.
