My wife loves to cook and is very good at it. When te the topic of fried chichen came up, she went running to you. Unfortunately it was a disaster, way too salty, totally unedible. The recipe calls for a CUP of salt. YUCK City

The salt is only to make the southern rub, this doesn't mean that you have use the whole thing. Paula says that you can keep it for 6 months.
Make the southern rub and keep it in a jar, use this whenever you want.

I had to chuckle when I read that someone would actually pour a cup of salt on a chicken, then complain that it is too salty!

Too much salt in the house seasoning. Instead I used 1/4 cup of salt, black pepper, and garlic powder. It is much less salty and easier to swallow.

Its official!! I can make fried chicken at home. I got 5 stars on dinner tonight! Better than any fried chicken I have ever had. I read all the comments and held back on the salt content... but next time will add a bit more. Paula, thanks for the reciipe!

The people that thought this chicken was too salty probably made the same mistake I did the first time I made this. I forgot that the house seasoning is for multiple uses instead of all at once. My family rarely eats chicken from restaurants now because of this recipe, we have to have it at least once a month!

Don't pass up this recipe because of the amount of hot sauce and the complaints of it being salty (people were not following the recipe correctly. This is NOT a spicy chicken and it will NOT taste like Buffalo wings. My kids didn't even know there was hot sauce in the ingredients and didn't believe it when my husband told them. Always read the reviews before trying the recipes on here - learn from others. Tried this recipe tonight and it looked and tasted like it came from a restaurant! First and formost, mix the House Seasoning ingredients and put in a salt or pepper shaker. Pat dry the chicken pieces, sprinkle w/the House Seasoning. After dipping in the hot sauce/egg mixture and dredging in the flour mixture I let the chicken sit on a cookie sheet while I heated the oil. The coating will stick better if you let is sit for 1/2 hour. I used a deep fryer and it worked so much better than my previous way of putting it in a frying pan and it keeps the heat at an even temperature. I put the chicken in and set the timer. I would recommend after the chicken comes out of the fryer to season it again with a shake or two of the House Seasoning. If you've failed at fried chicken before give this a try and you won't be disappointed!

Great recipe. Hey folks you're not supposed to use all of the house seasoning. That's the recipe for the seasoning. You mix it , put it in a container to have "House Seasoning" on hand. Just use enough to season the chicken to your taste.

I had to throw the majority of it out because nobody would eat it. Next time I think we'll just do a little sprinkle of the house seasoning. It seems like too much to just sprinkle on the chicken, though. Other that it being too salty, it was fantastic.
