    I have been cooking and loving it for years but had never made fried chicken before. After trying Paula's Southern Fried Chicken recipe for my friends and family, I will definitely make it over and over. I was a little fearful of getting the temperature of the oil right and sustaining that on my range with a pan, so I opted for my deep fryer, which I could set and maintain at 350 degrees. I took chicken breasts and sliced them into "fingers" and the chicken turned a perfect golden brown and ready to serve in 8-10 minutes. The meat was so tender, and everyone enjoyed the "mild bite" in the flavor of the batter. The finished product was light textured, and the hot sauce really does make the difference in the taste. I didn't use quite as much hot sauce as Paula suggested, fearing it might be too "hot" or spicy, but next time I will do it exactly as the recipe says. Will be fixing Paula's Southern Fried Chicken again... It was soooo easy and delicious, ya'all!

    This is the best fried chicken recipe ever!!!!! The two key ingredients are the hot sauce and the self rising flour. I use Frank's original. It is very simple to learn how to cut up a chicken which also makes this a very inexpensive family dinner. trust me, you will never eat at KFC again!

    Love this recipe. Definitely brine the chicken in salt water overnight, but otherwise just don't sprinkle too much seasonings or it will be too salty. Easy recipe, delicious!

    Folks...whenever Paula's recipe calls for House Seasoning, the recipe is given to make a whole bunch of it. Please, do not dump 1 cup of salt onto your chicken!!! Sprinkle like you would if it were a store bought seasoning.

    I fried a few of the cut up chicken and made exrtra chicken wings... I loved the chicken wings better and my husband loved them both. He said this recipe is better than my mother's (who passed away a few years ago and I said no way. It was easy to make but the peanut oil wasn't cheap but well worth it. I was afraid the hot sauce might over power the chicken but you cant taste that much of it. I told my husband next time I make this I will feed it to him in the doghouse. :

    I did add 1/3 cup flour and pepper to egg wash, then dipped in Panko bread crumbs. I baked the chicken at 375 degrees for 55-60 minutes instead of frying. Even my 2-year-old loved it.

    I USED PAULA'S RECIPE. THE ONLY THING DIFFERENT I DID WAS TO SEASON THE CHICKEN WITH THE HOUSE SEASONING AND THEN DUST THE TENDERS WITH FLOUR FOLLOWED BY THE EGG AND HOT SAUCE WASH AND THEN MORE FLOUR. YOU CAN PRESEASON THE CHICKEN AND RETURN IT TO THE FRIDGE FOR A WHILE. DUSTING THE CHICKEN SEALS THE SEASONINGS IN SO THEY DON''T WASH OFF IN THE EGG WASH. OUTSTANDING RECIPE.

    I didn't use the house seasoning. I just sprinkled some salt and pepper on a few drumsticks, then let them sit in the refrigerator while seasoned for 3 hours. This locked in the flavor and it wasn't too salty at all. The chicken was very crispy and delicious. It has changed the way I will cook my chicken. I cooked it in the deep fryer. Excellent recipe!
