This is an amazing recipe. I have fried A LOT of chicken (being from California I have spoken to many friends from the south and have used their techniques and decided to try something new and took a look at Food Network and hit on this recipe. The combination of the hot sauce, self rising flour and the house seasoning made my kids eyes buldge out. It is so straight forward in flavor and texture...it is everything that is right about fried chicken. I have never been able to live up to "take out" chicken...ala Popeye's....and the family now says this is the best they have had. Fry in oil at medium heat 350f and its a no brainer. I'm making it again tonight just because. Leftover cold its almost better. Perfect!

I made this using whole wheat flour(what I had on hand added some baking soda to it and it was terrific. I used Franks Hot Sauce mixed with the eggs, it was great!! Thanks Paula for a great recipe!!!

first time fried chicken, great but like the others said too much salt and im also a salt lover. other than that it was so easy to cook and tasted great!!

This was amazingly good chicken! All of you who can't seem to find her 'House Seasoning" recipe it's always (and in this case as well located after the instructions. Basically it's located at the very end of the entire recipe so what you need to do to locate it is scroll down. I used a deep fryer so I could control the temperature. It worked out well but I would not recommend what another poster said to heat the oil to 380. I heated it to 370 and it nearly burned the chicken. The recipe states 360 for the oil. I would stick with that. Next time I will skip the House Seasoning and use Seaon Salt. Just a personal taste preference. I love garlic but thought it added an odd mix to the flavors that wasn't appealing. The idea with the hot sauce added to the egg surprisingly good. I only had 1/2 a cup and part of that was buffalo wing sauce. Next time I will go ahead and use the buffalo wing sauce all together. The breading was great. It tasted to me like KFC's original recipe chicken. One more thing. I brined my chicken a few hours before cooking as I've found it to be the best way to tenderize it. This chicken tasted great. The breading was perfect. I will just switch the seasonling to Season Salt next time. MMMM!

I used boneless skinless breast cut in fairly small pieces so it would cook faster. I didn't have any self-rising flour so I added about a teaspoon of baking powder to my flour. I also used some cheap hot sauce that I found in the back of the pantry. This was absolutely delicious! (I can just imagine how much better this would be with Frank's Hot Sauce. The chicken is so tender and seasoned perfectly. We didn't feel any heat from the hot sauce, it just gave it tremendous flavor. The flour with baking soda makes the coating seem like it was cooked in shortening (that's a good thing! I also dumped the egg mixture in my bowl of chicken and it sat there marinating while I was preparing the skillet and frying the rest. I will always fry chicken with this recipe!

This is so good!! I don't like regular fried chicken really, so I used those chicken tenderloin strips you can get. I followed everything else, except I fry them for 5-6 minutes. Try this recipe!!!!!!

this recipe was pretty easy. I used chicken wings to cook so it wont take too long to fry.I followed the recipe but cut back on the salt and hot sauce. I actually used tapatio hot sauce and it taste great! mu chicken came out not too overcooked or too raw and it was really crispy.this was my first attempt on cooking fried chicken.thanks foodtv!!

I have fried chicken since I started cooking, ever way possible. And this recipe is the best. I have even used it for deer and pork chops. My whole family wants me to make at every feast. Thank you paula for another great recipe.
