I cooked this just like the recipe called. The only complaint I would have is that I wasted a cup of hot sauce. I don't think you needed to put that much in it. I could barely taste it. I used more to dip my chicken in. Maybe it was that I didn't use a hot sauce that was hot enough?
Anyhow I didn't think it was necessary to use a cup.
Everything else was good. I don't know why people said it was salty. I don't think you are supposed to use that entire house seasoning on this chicken recipe. I am sure it was just given cause you had to use it. I used Kosher salt and it was wonderful.

This was so good. I hope the people who said it was salty did not use the whole batch of house seasoning in this one recipe. You were to only sprinkle a little on the chicken and save the rest for another use.

I gave this five stars because even though I have not tried this yet all of paulas recipes are great. For those who are saying this recipe is to salty. The house seasoning says 1 cup of salt I am pretty sure (positive it is a misprint and should say 1 cup kosher salt.

I'm a country girl borned and raised, and while growing up in the South, fried chicken was our main entree two-three times a week. I know good fried chicken. I like this recipe, but the salt have to go. Plus the hot sauce has sodium in it as well. So for all of the low tolerate salt cookers, cut the salt in half or more for the house season recipe. Enjoy the chicken.

Suggest cutting back on the salt in the house seasoning, other than that it is great. My first time cooking fried chicken and will do again but with way less salt.

I am a local area food critic and I must say from time to time I like to try some new things at home and it is always nice to find something so simple, down home and just plain what you are looking for.
I am confused as to why the youg lady who gave this on star because she wanted more seasoning but then went on to say how perfectly moist and tender it was.
Please me more considerate
Thank you Paula

Oh My God I made this recipe last night and my roommates went crazy for it. I changed it a bit with less salt and seasoned the chicken with the House Seasoning after they were cooked as well. I also added the hot sauce over top of the chicken after they were cooked. It was amazing before I did all that as well. I will continue to use this recipe for now on when I make fried chicken.

This is the best fried chicken recipe I have ever tried. I have tried many and they just didn't turn out right. This one is simple, it tastes wonderful. The hot sauce adds that extra "kick" but It is not so spicy that my kids can't eat it. I made mine with boneless chicken breasts and it was perfect. This is the only fried chicken recipe that I will use from now on.

My husband and I just ate this and it was SO awesome! I don't really like fried chicken, but the flavor of this chicken with the kick from the hot sauce was so great. The crust crisps so nicely and the chicken stays very juicy. I used Louisiana hot sauce and fried in vegetable oil, and instead of house seasoning (which i DO like by the way I used Montreal chicken seasoning by McCormick. Other than that I followed the recipe exactly and it was great. I'm going to try this with wings next and up the spice aspect by putting cayenne in the flour. I am sure it will be a big hit!
