Ingredients
- 1 stick, plus 2 tablespoons butter, room temperature, divided
- 4 large Vidalia onions, thinly sliced
- 3 tablespoons crumbled Gorgonzola
- 4 (8-ounce) beef fillets
- Salt and freshly ground black pepper
Directions
Preheat grill to medium-high heat. Spray grill with nonstick nonflammable cooking spray.
In a large saucepan, melt 2 tablespoons butter over medium-low heat. Add onions, and cook, stirring frequently, for 20 minutes, or until onions are caramelized. Remove from heat, and set aside.
In a small bowl, combine 1 stick of butter and Gorgonzola; cover, and refrigerate until ready to use.
Sprinkle fillets evenly with salt and pepper. Grill fillets, covered with grill lid, for 4 to 6 minutes per side, or until desired degree of doneness. *Cook's Note: For a rare doneness, cook steaks on each side for 3 to 4 minutes. Transfer to serving plates and let sit for 5 minutes. Serve fillets with caramelized onions and Gorgonzola butter.

I made this with NY Strip Steaks and it was absolutely wonderful - so much flavor with the Gorganzola & Onions, this recipe makes restaurant quality steaks (if you opt for a tender cut of beef of course. I added 2 tsp of brown sugar to the onions b/c I like my carmelized onions to be pretty sweet - also I cooked them down for more like 30 minutes rather than the 20 in the recipe. Great grillin' meal w/ grilled romaine lettuce salad & grilled fingerling potatoes as the sides!

This was so easy and delicious! I thought I hadn't kept the recipe after I made it and I just stumbled onto my printed recipe! I can't wait. It's one of my absolute favorite ways to enjoy steak! I just wish vidalias were in season all year, but I will just carmelize yellow onions till the spring.
