    I made this with pigeon peas in stead of peas. I bought bulk chorizo and rolled it into little balls, and I also used the yellow rice with sazon and it was great. Chorizo was inexpensive and everyone loved it!

    You wanna make a rice, chorizo and a thousands of other things meal, cool, but call it paella. Paula, you have never been in europe i gotta say. I recommend you to go to the region of valencia in spain and order a paella (coz, you have always to order it in advance, is not that easy) and look very careful at the ingrediants. Ask the chef for help, thay are gonna be happy to help you. Paella is maybe the star of the Spanish gastronomy, so you should learn from someone who at least, has seen a paella before. I respect your recipe, havent try tho. I guess is good, but IT IS NOT A PAELLA.

    Too greasy

    The rice and chicken cooked perfectly. I could only find the soft chorizo, so I used linguica instead. The dish needed a little more flavor and unfortunately was very greasy. I'm not sure if it was from browning the chicken in the pan or from the sausage. Maybe brown the chicken and sausage in a different pan before adding to the rice mixture and cooking through.

    Crowd pleaser for sure! I love this dish! I am making it again for the 5th time this year. Its amazing how something so good can be so simple! Saffron was expensive but a pinch goes a looonnnnggggg way! Enjoy everyone! thanks paula you rock!

    I didn't follow the recipe exactly. added some things; diced cayene pepper, corn, dried basil, white wine and freshly chopped parsely. I also replaced the onion (not specified) with a spanish onion, and used turkey sausage, and thin boneless chicken breast. Lastly I garnished the dish with lemon and fried plantains, using Alton Brown's recipe. Phenom.

    This was SO GOOD and easy to make - will definitely add to my repetoire. Used Portuguese chourico and chicken breasts which remained tender. Waiting for all of the broth to reduce took longer than the 20 minutes stated in recipe. Thanks Paula - you've done it again!!

    This was my first time attempting a paella & I was looking for one with no seafood being I have a one year old and a husband who doesnt eat seafood. It was perfect. Not hard to cook at all though a little time consuming but well worht it. I also used the packet of sazon & felt it did the job. Thank you Paula for another great meal!

    Well, those people that rated this very low obvoiusly either substituted ingredients, left something out or can't cook! Not only was this delicous but very easy too! I agree with the person who suggested NOT to substitute the chorizo with mexican chorizo! The smoky flavor of the spanish style chorizo made the dish! I added a couple of dashes of Cholulo hot sauce on my serving to 'kick it up an notch' and really set the flavors off!! I can't wait to eat the leftovers!

    This was SOOOO GOOD! I'm an ok cook but don't do good with complicated recipes that require alot. This was super easy & turned out wonderful! I used tomatoes WITH juice & it gave great flavor, we squeezed lemon on top before eating, and instead of leaving the chicken whole I shredded it up after cooking, it was much easier to eat that way! As for the Chorizo, I got it at Walmart, its links but VERY soft, just cut small chunks, form it into a slice or meatball type & add in with the broth, cooked just fine! Great recipe Paula we LOVED IT!!!

    I love this dish. My kids are a little picky about one pot meals but they love it and ask for more... WOW! I do buy the spanish saffron rice and sub. smoked sausage for the real deal. It,s all good!

    I have to say, this dish impressed me. Like others, I substituted a few things because I had them on hand, but it was the same for the most part. I've made it several times since and everyone that has tried has wanted the recipe.

    Very good, 2 thumbs up. I did not have peas in the house so I added some green spanish olives with pimentos in them ,gave it a nice flavor. Was easy to make, did not take long at all and very tasty.

    I made this for dinner tonight and my husband promptly told me it was bland, and my 4 yr old twins wouldn't touch it. Yes, I'm bummed out. However, my kids often snub their noses at anything new, so take that with a grain of salt. Maybe the bad review was my fault as I used andouille sausage links instead of chorizo because I had it on hand. I used 1 packed of the Goya Sazon. Maybe I should have used 1 1/2 packets to boost the flavors along with some hot sauce or red pepper flakes. The chicken was moist and tender and the recipe is easy to pull together and makes a lot.

    FIRST TIME FOR PAELLA

    MY WIFE AND I TRIED PAULA'S RECIPE AND IT WAS OUR FIRST TIME EVER ATTEMPT ON PAELLA. IT TURNED OUT PRETTY GOOD. WE HAD A HARD TIME FINDING THE CHORIZO SAUSAGE LINKS AND I'M NOT SURE WE GOT IT RIGHT. WHEN WE OPENED THE PACKAGE, THE LINKS WERE SOFT AND MUSHY. IT WAS IMPOSSIBLE TO CUT ON THE BIAS PER THE RECIPE. THE CHORIZO SAUSAGE LINKS ENDED UP FALLING APART IN THE PAELLA. NOT SURE WE GOT THE RIGHT TYPE OF CHORIZO SAUSAGE. WE FOUND THE SAFFRON THREADS BUT IT WAY TOO EXPENSIVE SO WE LEFT IT OUT. THE FLAVOR ENDED UP VERY GOOD AND SPICY. THE COLOR AND TEXTURE WAS PERFECT ACCORDING TO OUR TASTES.

    I've never been much of a cook; so, I wasn't quite sure how this recipe was going to turn out when I started it. I manage to get every ingrediant (with the exception of the the saffron and the chorizo). The chorizo, I substituted with Hilshire Farms smoked sausage. I bought turmeric as a replacement for the saffron because I heard from reviews on various sites that that's a decent substitute if you don't want to spend that kind of money. (A little spice bottle of saffron cost $18_and it doesn't come close to filling the bottle). I didn't end up using the sausage but not the turmeric. Can I just say that this recipe was very easy and right on point with everything. It tasted just like it came from an excellent spanish restaurant (and that's not me tooting my own horn because if you ask my husband, he'll tell you that's the gospel truth)! Now, HE'S the cook in the family! I made this for him & his mom. He was so impressed, he demanded I make this same recipe every week for him! LOL. His mom definitely enjoyed it, as well as she asked what it was and for the recipe. Then Paula! You're a cooking GODDESS!

    Wonderful Recipe

    Like others, I changed a few things to fit our style. I used Cajun Smoke Sausage and left out the peas and saffron. I also used brown long grain rice. My husband raved over the dish! It is definitely one to add to the recipe list. I also used boneless chicken strips to add in the cooking time. We loved it!

    I have never made this before. Thought it was too complicated! Excellent! I used chicken tenders in lieu of whole pieces. Saffron is expensive, but worth it. You can use it for a lot of other dishes and it goes a long way. I added shrimp and clams. This makes a lot, so invite friends over or cut the recipe in half. Definitely a keeper.

    I made this for our 29th wedding anniversary and with the exception of the chicken I ran it down my garbage disposal right before serving. Sorry, this was disgusting.

    Do NOT substitute Mexican chorizo!

    This is a fine,"Americanized" version suitable for a home cook, as very few of us could ever try to make an authentic Spanish paella. (This is a great contrast to her "Tuscan Carbonara" from this same episode--with the carbonara, it is much easier, cheaper, and healthier to make the authentic version with whole eggs and no cream!). However, like a previous reviewer, I was appalled to hear Paula say that Mexican chorizo was an acceptable substitute for Spanish chorizo, hence my three stars. They are TOTALLY different, and neither one can be used as a substitute for the other. Spanish chorizo is dry-cured and does not have to be cooked; it's sort of like a dry salami. Mexican chorizo must be cooked and is typically used crumbled in breakfast dishes; it's more similar to Italian hot sausage. Spanish chorizo is indeed hard to find and expensive; acceptable substitutes (though they will taste different) include linguica and kielbasa. Saffron, unfortunately, is an absolutely key ingredient in paella. You could substitute a very small amount of turmeric, just for the color, in a pinch.
