    This has been my go-to black-eyed peas recipe for a few years now. I modify it by using turkey bacon (instead of "real" bacon, I use Season All seasoned salt (instead of regular salt, 1 can of chicken stock (to replace one cup of water, and I also add one large jalapeno pepper and a table spoon of diced garlic for added flavor and kick! This dish is delicious by itself or paired with fried catfish or chicken.

    Super easy and tasty! I soaked my beans over night and most of the day. Then cooked them for about an hour. I used a can of diced tomatoes and most of a small can of green chilies. I did add about 3/4 more water for the last 15 minutes. Turned out great!

    I used this recipe as a base for black eyed peas and stewed tomatoes. I cheated and used 2 cans of black eyed peas instead of the dried kind.

    When sauteeing the onion I also added 1 clove of minced garlic and 1 half chopped green pepper. In addition to the black eyed peas and Rotel, I also added 1 16oz. can of stewed tomatoes. For seasonings I used: 1/2 tsp chili powder, 1/2 tsp cumin, 1 Tbsp brown sugar, salt, and pepper. Simmer for 10 minutes+ and you're good to go!

    (Typically, I stick more closely to recipes. I wanted something quick for January 1st and incoporated a few other recipe ideas I saw online.

    I would give this a 5 star had I not made my own modifications. I already had hog jowl, so I used that rather than bacon. I didn't go thru the soaking of the peas..instead I threw all the ingredients plus a chopped red bell pepper and a few leafy tops of celery and 6 cups of water in the crock pot. I cooked on low for 6 hours and they were perfect.

    Wonderful recipe- I triple the recipe and have family and friends over every New Year's Day for an early dinner and this dish is a hit! Sometimes I add a ham hock to really kick it up a notch.

    I cooked mine by the recipe without soaking my peas & also added a 14.5 oz. can of chicken broth & my peas were soft after one hour. Quick, easy, and tasty!

    I have said this time and time again, You cannot go wrong with Paula. This recipe is no exception. This was the first time I have ever made black-eyed peas and it was great. The only variations I made was adding the bacon to the peas during the last 15 minutes of cooking, added pickled jalapenos, and I picked up diced tomatoes with basil and oregano. Also, many reviews said that it took a really long time to cook the peas. It took about an 1 hr 30 mins to cook and the peas were soft. Just remember to cook them on medium heat. I did soak the peas for 4 hours before cooking. Lastly, you may need to add a little hot water during the last 30 minutes. Great recipe!!
