I did not pre-soak the peas!!!! Everyone keeps saying you must, I disagree. I did add water, probably two cups over the 45 to 60 minutes. I served them over rice as a complete meal. Wonderful!

I soaked the black eyed peas overnight in the refrigerator and started from there. I used half homemade chicken stock and half water. Also, I held off the salt until the end because salt can toughen the beans. Have to say, OUTRAGEOUSLY good. I've enjoyed them hot (best, at room temperature and cold and they're always good. I think I'm going to use this basic recipe with other beans, it was so good.

I made this recipe with only a few minor changes. I added 1 diced jalapeno pepper (seeded, 2 bay leaves, and 1 clove of garlic - crushed. I also used chicken stock in place of the water. I service this with grilled hamburgers and brats and got rave reviews. Great side dish!

the flavor of the dish was good, but for some reason it had a bitter taste. i recently had black eyed peas in kentucky and they were awesome, but maybe i should partially cook the beans next time

I tried this for a New Year's party. All of our guests loved it. I substituted chicken broth for the water. We will definately fix this again!

This year I completely forgot to pick up my black eyed peas when I did my grocery shopping. Luckily I found this recipe that still allowed me the time to go to the grocery store and have a meal in time for supper. Well, the grocer was out of black eyed peas! low and behold an employee there found me frozen black eyed peas ( never heard of such a thing. I also picked up a very thick slice of ham from the deli and some kale. I was nervous with the frozen peas and the extra ingredients but The frozen peas worked out great (no soaking needed. I added about a pound of cubed ham and in the last 5 mins a cup of kale. This was so amazing we might just make this a monthly meal! Almost better than chili!

Very good recipe. I used fresh peas and 1 tbsp chili powder (instead of 1 tsp and they turned out great. Good flavor and texture, not too spicy.

Ok, first, you need to soak any type of beans such as this!! Follow the package directions. If you saw the episode with these in it, she had already soaked the beans. JUST FOLLOW THE PACKAGE DIRECTIONS!! I don't care what recipe you use...you have to soak them first!
This is my second year of using this recipe. WE LOVE IT! Last year, I made them exactly as the recipe called for. This year I varied it a little. I added a tbsp. of Emeril's Essence (love this seasoning....I use it on everything...you can find it in the spice aisle and instead of 3 cups of water, I used 2 cans of beer and 1 cup of water. Delicious!!!!!!!!!!!!!!
Great flavor and just the right amount of spice. I served it with Southern Corn Bread and we had a wonderful meal!!
