I also did a few variations on this basic recipe. Instead of the bacon I added 2 sliced Andouille (Mild & Smokey Creole Brand Sausage and instead of water I used a quart of Chicken. After soaking the peas overnight and sauteing the onions I put all the ingredients in a Crock Pot. I let it cook on low for 24 hours. Absolutely delicious!!! I plan on serving this with wilted greens for my New Years dinner on the first.

You really MUST soak your beans over-night. It will just take too long for them to cook without adding water so much. Instead of just adding water I added chicken stock and put the bacon right in after cooking it with everything else while it cooks. The result is PERFECTION! I don't add tomatoes, that's not the way black folks do it so I left that out. I love you Paula, you know how southern cooking is done right. You are an honorary sista! :

I was surprised to read that some people had problems with the peas not being fully cooked. I rinsed them and then soaked them in water while I cooked the bacon & sauted the onions. Then brought everything to a boil, covered & cooked on medium for 45 minutes, checking the water. Had to add some water along the way. Can't imagine that it made that much difference, but I just cooked them until they were cooked through. I poured off about 1/2 of the bacon grease, just because it seemed like more than was needed. And, unfortunately, the bacon never made it on top, as I ended up eating it while I was preparing the peas. Don't let the 4 stars overall fool you...these are GOOD! The BEST black eyed peas I've ever had!

After I cooked the peas according to the directions, half of them were raw and crunchy and the other half were mushy. The seasoning was ok, but the amount of water and the cook time need to be adjusted.

You need to double the amount of water and cook at least 90 minutes. At 90 minutes the peas started to scirch and they were still just barely cooked. I didn't adjust the amount of seasonings and the flavor is OK, but... I'll just doctor up canned next time.

A good basic recipe for beans. I agree with the other reviewers that the beauty of this one is how simple it is. No pre-soaking of the beans. Basically throw everything in the pot and let it cook for an hour or so.
I didn't have the chile's so I went with some hot sauce. Had to add more on top when they were done.

These were so easy and yummy! My sister made these for New Year's; I'm not a big fan of black eyed peas and usually only only eat them once a year (it's a Southern tradition. She added jalapenos and garlic. However, I will definitely make this recipe and not just for the New Year.

This was so simple, and here is a tip: used canned peas! It's just as delicious and makes it that much faster. I also saved a step and put the bacon plus the diced onions on a baking sheet and put them in the oven to cook at the same time. This kept the stove top from getting splattered and I could tend to other items on my menu. We will definitely make this again.

Best black eyed peas ever! I soaked my peas overnight and I did end up adding 1 more cup of water, in which I dissolved a cube of chicken bouillon. I also skipped the bacon and sauteed the onions in olive oil. This will be my New Year's Day recipe forevermore! We love Paula!
