Ingredients

  • 1 (18-ounce) package spice cake mix
  • 1 (4 serving) package instant vanilla pudding mix
  • 1 cup sour cream
  • 4 eggs, beaten
  • 1/2 cup corn oil
  • 5 tablespoons sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup chopped pecans

Directions

Preheat oven to 350 degrees F.

Grease a 10-inch tube pan. Combine cake mix, instant pudding, sour cream, eggs, and corn oil and beat together well. In a separate bowl, combine sugar, cinnamon, and pecans. Pour half of batter into prepared pan and sprinkle with sugar mixture, reserving a little to sprinkle on top. Pour the rest of batter into pan and sprinkle with the rest of sugar mixture. Bake 1 hour. Let cool and remove from pan.

    I thought this cake was going to taste like a regular sour cream coffee cake but the spice cake really adds to the flavor! Unfortunately, I did not read the reviews until now, but luckily, I have made similiar coffee cakes and knew one hour was too long. I baked the cake for 50 min. and it came out perfect! It's a cinch to make and taste delicious. Definitely a keeper!!

    This Cinnamon Cake is the only cake my son likes. I used to buy the Cinnamon Strusel cake mix when he was small and since they have quit making it, I use your receipe and so still can keep the tradition of this cake for his birthday.
    I am so glad you had this on your show one day as I was not sure what I would do as he does not like regular birthday cake.
    This is delicious, moist and my entire family loves it.

    I'm not sure if it is was my fault because I used somebody elses oven or if the baking time if wrong because my cake was burnt. I have been baking over 30 years and this was a first for me. So I dunno know, but the inside of the cake was really good. So I made another one making sure I didn't burn it and it was perfect. I put a cream cheese glaze over it and my family thought it was delicious so it is now on a rotation. I don't know where I got the idea of the cream cheese glaze from, but it takes it over the top. I just made a basic cream cheese icing for carrot cakes, but I made about half the amount and thinned it out with some milk and drizzled it over the cake....Divine!
