I made this recipe for a breakfast meeting with my peers. They went back for seconds and asked for the recipe. It is so simple and delicious!!!

Make this for my boyfriend every once in a while and he loves it! Always have to cook it for 50-60 minutes to get it to firm up. I also add 1-2 TBSP of fresh thyme and he loves that. I use Marie Callender's frozen pie crust b/c you don't have to thaw, and I use half the bacon and spinach amounts using that crust.

I used 1 cup of half and half instead of heavy cream and also added finely chopped onions.. excellent dish!!

I made this last night and it was very easy and looked spectacular! I haven't tasted it yet, however! I happened to have some fresh spinach that I needed to use before it spoiled. I actually doubled the ingredients to make two and used a bit of mozzarella that I also had in the refrigerator in need of being used. I didn't have much heavy cream, so to make up the difference I used a lactose milk that we had in the fridge. Can't wait to see how this one turns out! After cooking, I let them cool overnight and put them in the freezer in the morning - one to take with me on a weekend jet setting trip and one for a later date. Giving it three stars because I haven't tasted it yet! And will rate appropriately upon taste.

Wow! This was so darn tasty. I first served it for Christmas Brunch and it was a big hit. I used half & half in place of heavy cream, simply because it's what I had on hand, and I don't think it makes a difference. Perfectly fluffy, creamy egg, salty bacon, tangy cheese and the perfect amount of spinach: This is a keeper!

Perfect, perfect, perfect. Easy too. It always makes the morning of my holidays so much better because it's easy to make and so very delicious. Thanks Paula! My co-workers thank you too, I make it occasionally as a treat for them. YUMMY!!!!!!!!!!!!!

Really good! But I tweak the recipe a little bit by adding a tea spoon of dijon mustard to the egg mix and slice of tomato on top of the quciche.
