This is a fantastic dish. If you love the taste of bacon and eggs only rich, you'll love this simple but elegant dish. One suggestion though....we cooked the quiche an extra 10 minutes and it was still liquidie. Next time, we will reduce the heavy cream from 1 1/2 cups to 1 cup or 1 1/4 cups. Otherwise, this is a 10 out of 10 dish.
Way to go Paula on another 'gem'!

it was so great. i made it in a baking dish without the crust to cut the carbs and it was the best quiche i have made as yet. really creamy.

THIS RECIPE WAS SO EASY, AND SO PACKED WITH GREAT FLAVOR. I,M NOT A SPINACH EATER AND WAS LOOKING FOR WAYS TO INCORPORATE IT INTO MY DIET, OH BOY IS THIS GOOD.I ALSO MADE IT USING CHEDDAR CHEESE AND THAT ROCKED TOO!

Try substituting fresh, diced, roasted green chiles for the spinach, sausage or chorizo for the bacon and cheddar cheese for a delicious Mexican version.
