    Easy and delicious. Great presentation, too. I prepared it for a brunch. Everybody had seconds. The aged Swiss cheese and the bacon complimented each other perfectly. Rich flavors. Make sure you fully cook the bacon. Otherwise, you run the risk of the bacon cooking in the quiche. You will taste bacon grease (instead of bacon smokiness. I used pre-washed, fresh spinach. O didnt need to sautee or cook it. I used it as is. It turned out delicious!

    This is the best quiche recipe ever! I have used this with different veggies ( which I never pre cook and it always turns out great! In fact my mother in law who is an amazing cook said it is the best quiche she's ever had.

    Very tasty,however,go easy on the salt as the bacon makes this quiche salty enough. I used an 8 inch deep pie dish and the quantity of filling as stated was just enough.

    Next time I make this I will add a finely diced green onion.

    I am new to cooking and I have never cooked quiche before. I made this dish for christmas breakfast at my in- laws house. My husband and his family are vegetarian, so I used morningstar veggie bacon strips instead of real bacon and everyone loved it. Definently an easy dish to get right and it tastes great! Will definently make again!

    I used store bought pie crust in my 8-inch deep-dish tart pan & the quiche puffed up beautifully in the oven ( 6 eggs & 1 1/2c cream. We love spinach, so I sautéed about 4 c & pressed out any liquid. I substituted Monterey jack for Swiss and added sautéed sliced baby Bella mushrooms to replace 1/2 the bacon. It made a filling dinner with a green salad and bottle of crisp white wine. Rich & divine!!! Thanks for another easy & delicious recipe Paula!

    I must admit I didn't read all the reviews so I apologize for any repeat advice. I buy applewood smoked thick slice bacon and cook in oven to make less clean up. Cover large rimmed baking sheet with heavy duty foil. Preheat oven to 400 degrees. Bake bacon for 15-20 minutes until desired doneness.(This is courtesy of my brother-I can't take credit! I also bought pound and a half for this recipe and used 8 eggs and 2 cups whole cream and made 2 pans. Used what recipe called for spinach. Chopped spinach in food processor on pulse to speed up things and worked great. Hope this helps.

    I have made this quichefor Christmas morningfor the past 4 years. We absolutely love it! So decadent and a real treat on Christmas morning! I have learned to modify it slightly as it does make more than one pie crust so I add more eggs (9 and cream (2c and use two frozen pie crusts. I bake both and freeze one for use at a later time. I use fresh spinach and chop it the day before as well as cook and crumble the bacon to help out on prep time. Christmas morning I just have to mix up the egg batter and layer in the cheese, spinach and bacon- super fast and they always come out perfect!
