    Love it. So did my SUPER picky 6 & 11 year old boys. We didn't give them too much, but thought they had to at least try it. WHOOHOO! Even the mushrooms were gobbled up. I didn't have regular honey mustard, but had some honey mustard salad dressing. Easy switcheroo.
    I will take a little credit that we used our own farm grown eggs and bacon. But the salad was a hit.

    This was such a great salad, and my whole family loved it. The dressing is quite vinegary, but I prefer that to an overly sweet honey mustard dressing. I'll make this recipe again in the future for sure.

    I didn't have honey mustard so used Dijon and added honey. I used 1/2 cup red vinegar and even with the honey, mustard and shallots it was way too strong and tart so I had to add sugar twice to take away the heavy vinegar. I also added a little water and added hard boiled eggs sliced up. I will make again but go lighter on the vinegar.

    Tried this recipe for lunch,didn't care for the dressing as was,but added a store brought vingerette instead. Loved it, never ate spinach before,but will continue to now. Thanks Paula. =
