Ingredients

  • 1/3 cup cider vinegar
  • 3/4 cup sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1/2 small red onion, grated
  • 1 1/2 tablespoons poppy seeds
  • 1 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1 1/2 pounds fresh spinach, washed and torn into pieces
  • 1 can hearts of palm, drained and chopped
  • 2 cups strawberries, stemmed and sliced
  • 1 cup chopped walnuts

Directions

For the dressing, combine the vinegar, sugar, lemon juice, and salt in a small non-reactive saucepan and heat over medium heat until the sugar dissolves, stirring frequently. Remove pan from heat and let cool to room temperature. When cooled, whisk in the oil, onion, poppy seeds, dry mustard and paprika until thoroughly combined. Set dressing aside. In a salad bowl, combine the spinach, hearts of palm, strawberries, and walnuts. When ready to serve, add some of the dressing, and toss gently. Serve the remaining dressing alongside the salad so diners may add more, if desired.

    I am sooo Happy I found the 'Spinach/Strawberry Salad' recipe from "Uptown Picnic" Episode!!

    This Salad is Wonderful........it will be aired again Mon. Oct. 26, 2009.....and to find the recipe.....just go under... Foodnetwork....."Paula Deen".......and type in 'Spinach/Strawberry Salad..........and it is the lst recipe listed.......they just probably forgot it/ but have now added it!!!........It is soooo fresh!!..........Love it!!.......Oh, and remember, when serving,......... to put your dressing in the bottom of the bowl and add all the salad ingredients,........then Toss!!..........(keeps from drowning the salad....as you can always add more)Read more

    For the unhappy viewers about not having the spinach/strawberry salad recipe, try Paula's "Spinach, Strawberry, & Hearts of... Palm Salad" it sounds like the same dressing recipe and has great reviews. Also I thought the comment about her diamonds was a cheap remark! Let her celebrate all of her hard work. Green was showing that day for someone!Read more

    Very good and refreshing. I cut the salad down to 2 servings, used almonds instead of walnuts and lime juice instead of lemon... since I didn't havr those ingredients. My husband loved it too...yay, I can get him to eat greens!Read more

    Awesome Salad - Can Reduce the Sugar

    This is a fabulous salad! I brought to an Easter dinner and it was a huge hit. As with lots of Paula recipes, you can Really... cut back on the sugar. I used only half the sugar for the dressing the second time I made this and it turned out fine. Avacado is a great addition.Read more

    Thank you for sharing this recipe. I made this for the rehersal dinner for my youngest son and gave the recipe out... to...sorry, lost count! I kept the pecans to the side due to possible allergies. I agree, the dressing will last for sometime and we have used it with other bitter greens and added other items to stretch for a light summer dinner. I think the dressing is NOT to sweet when other flavor items are added to contrast. PS..the wedding was outstanding and beautiful and the leftover salad was refreshing that late night.....thanks again!Read more
