Very hearty side dish. As Bobby said on the show, this dish could absolutely be used as a meat replacement for a vegetarian meal.

I love, love, LOVE this recipe!!! My mom used to make stuffed zucchini when I was growing up, but it didn't have the spinach in it. This reminds me of her recipe, but so much better with the spinach! I made it and it was a hit with my family. I even gave my 17 month old granddaughter some, and she ate a whole half by herself! We've been looking for healthy, lighter meals to get away from the heavy meat and potato meals so we can watch our weight. This is perfect!

I've made this a few times now and it's a favorite of my family. Each time I have made it without the spinach and it came out absolutely delicious! I'm sure the spinach would be good in it too, but I just never seem to have it on hand when I want to make these!

This was good, but came out bland for me. Great use of zuchhini and pretty easy so I shall try again with modifications and more seasoning.

Great Recipe. Modified a bit to make a main course. Used a 1lb of Ground Turkey Breast. Substituted Bread Crumbs and Panko for Chix Stuffing, used lite sour cream and lite cheese and added parm and garlic powder. Delish! Easy and Healthy! Omitted Butter!

I really departed from the recipe but the results were still fabulous. Used Italian bread crumbs instead of stuffing. Grated carrot, sauteed onions and a squirt of anchovie paste. Used both parmesan and mozarella. I will do this again. Thought about using fresh cubed tomatoes. Maybe next time. YUM!!

The fennel & onions went on the steak.....so, no, I don't think you were drinking but had to comment!! I haven't made this recipe yet but plan to on Friday for "company" so I'm pre-rating it a 5 star!!!

OK....not great! BTW, didn't I see a different recipe on the TV Show? I thought that she mixed the Fennell saute with the bread crumbs and the roasted zucchini and I don't recall any sour cream and I don't recall any yellow squash either! I think I was sober when I watched the Show? I need help! Pass the butter, please!
