    I took the earlier suggestion of grating the sqash a day early. However it was still very moist so i put it in a ziplock bag and cut a tiny hole in one corner and squeezed out all the excess water. I also used only half the butter and fried them in my cast iron skillet. I used half mozzerella cheese and half cheddar because i had no parmesan. I layered the cakes and put marinara sauce between the layers and served it as the main dish with sweet potatos and green beans. When my son was finshed, he asked for more lasagna. Lol. He had no clue he was eating squash.

    Loved this recipe! However, you must dry of the squash and zucchini or you won't be able to get the patties to bind correctly. I will bake them next time instead of frying. My bratty son did not enjoy them but the rest of us loved them.

    Antyhing that gets my kids to eat veggies is a 5 star recipe in my book - Love the flavors and they were devoured before I could get seconds. I agree with the comment about getting rid of water- this is key to getting the right texture. For any Celiacs out there we substituted a mixture of gluten free cracker/bread crumbs to make this a great gluten free recipe.

    I really enjoyed the flavors and would definitely try this recipe again. I would recommend shredding the squashes the previous day. Making sure that all the excess water is out of the squash is vital.

    This was a great recipe! I made at a cookout and got rave reviews! Ive ready many of the reviews and I also saw the episode. I do not see at all where people could find them too messy and hard to make. It was a piece of cake! Seeing the episode I could have swore she used GRATED parm and not shredded wich would make a big difference in the final product I would believe. I got all of the Parm flavor but none of the runny mess. I also used Panko break crumbs instead of regular bread crumbs because thats what I had on hand and they turned out perfect!! I did grate the squash and zucchini and let sit in a strainer with a little salt for at least a hour and then squeezed them dry with a kitchen towel. This is a definate must at every cookout from now on!! Thank you Paula and Food Network for finding her!!!

    I tried to fry them, but it came out in messy clumps. The next time, we put the unbreaded patties in the oven and topped it with some shredded mozzerella. It was delicious! I know this will be a recipe I will make over and over!

    Great recipe. Just really squeeze the water out. I simply use my fist, fast and ease. I use one squash and one zucchini for a family off four. I added a few more spices, that all. Fast and easy. Everyone loved them and they are a fussy bunch.

    same reviews...where are the original 95? I don't want to go
    through every page and review that repeats the same review.

    not sure why others had problems but i loved these and even my fussy-eaters (3 and 4 yrs olds gobbled these down. i added about 1 1/2 tablespoons of flour to the recipe for some sticking power and really patted the squash and zucchini dry before mixing with other ingredients and it wasn't messy or difficult. served as a side dish- yum!
