Make a lighter version by using fat free sour cream, 2% cheese, olive oil & cooking spray. It is such a versitile recipe! We love this, even added it to our special occations ;-

I made this last night. It was fabulous. I did cut the butter in half and added olive oil where I felt I could and sprayed the dish with Pam instead of lining with butter. It was still not low fat but a little less. Easy to do and delicious.

My husband was looking for a terrific squash casserole recipe and found this one. Awesome! It was very easy to prepare and we added a 6 oz. can of crab meat and a 6 oz. can of claw meat. We also added Panko instead of the the crushed crackers and substituted olive oil instead of butter and it came out wonderful. Very tasty and could be a meal in itself.

So glad I came across this recipe! It may not exactly be health food, but it is a good way to get my son to eat his vegetables without complaint! And there are minor modifications you can do to make it a little more figure-friendly. You can use less butter and sub some olive oil. I used whole wheat Ritz crackers on top, and it was Yummm-Mazing...Happy eating!

I love this so much, I know it is fattening but it tastes so good ... I tweaked it a little, I add bacon pieces to it. My husband and I love it, but I eat most of it. I also do not use house seasoning, I figure there is enough salt in the cheese and bacon already. I also boil/steam my squash instead of pan cooking them, and I use mixed cheeses too (white and cheddar.

I have made this casserole several times including Thanksgiving and Christmas day dinners...super easy, travels well. I use 1 teaspoon salt, 1/4 teaspoon pepper and 1/4 teaspoon garlic powder rather than making up a big batch of spice...so technically I use more that Paula calls for - I also use fat free sour cream, 2% cheese and cooking spray rather than any butter, oil, etc...still delicious, no one suspects it is a little lower in fat. I highly recommend.
