Strawberry-Cream Cheese Stuffed French Toast

Ingredients
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon granulated sugar
  • 8 ounces cream cheese
  • 12 slices white bread
  • 1 cup sliced fresh strawberries
  • Butter, for cooking
  • Maple syrup, for serving
  • Strawberry Syrup, for serving, recipe follows
  • Confectioners' sugar, for serving
  • Strawberry Syrup:
  • 3 cups sliced strawberries
  • 1 cup granulated sugar
  • Zest and juice of 1 lemon
Directions

In a small bowl, whisk together the eggs, milk, and granulated sugar. Spread the cream cheese on half of the bread slices and top with strawberries. Top with the remaining 6 bread slices and press around the edges to seal.

Melt butter on a griddle over medium-low heat. Dip the sandwiches in the egg mixture for a few seconds on each side. Cook the sandwiches until golden brown, 2 to 3 minutes per side. Serve with maple syrup, Strawberry Syrup, or confectioners' sugar.

Strawberry Syrup:

In a medium saucepan, combine all the ingredients and bring to a boil. Lower the heat and simmer until the strawberries are soft and the syrup is thickened and reduced by 1/3 to 1/2 in volume, 15 to 18 minutes.

Remove from the heat and let cool to room temperature before serving.

Cook's Note: If a thinner syrup is desired, strain the hot syrup through a fine mesh strainer into a clean container and let cool.

I made this for my wife on Mother's Day (today. However, I drizzled some chocolate syrup in with the cream cheese and strawberries. I also added a little cinnamon in the egg mixture. Made this today as a test run for guests at our B&B. I made homemade bread last night and it turned out great. I put a thin smear of cream cheese on both sides (you could see the bread through it in just a few places so it wasn't too thick, piled the fresh strawberries inside and mashed them together. Putting the cream cheese on both sides ensures that the edges will seal well and keeps the strawberry juices in a little pocket. Our family thought their was too much cream cheese. I also used store bought white bread which much have been much more absorbent than Paula's because I had to use double the amount of egg mixture. Medium low heat was not the same on my glass top stove. Needed to bump the temp up to medium. I loved this recipe. My husband ate leftovers from a pancake breakfast but this was so easy, I made it for myself. I think he was jealous. It took no time at all. By the time my sausage was cooked my french toast was done, with the tasty strawberry syrup to go with it. I used frozen whole strawberries that were easy to slice. I've never liked French toast but this recipe changed my mind. I would definitely make this again because it was a hit for a lovely Saturday morning breakfast. Very good but the cream cheese is a bit tangy for the rest of the dish. I would add a smidgen of sugar or vanilla to the cream cheese - not a lot - just enough to offset the tanginess of the cream cheese. Do not use too much cream cheese. Also, helpful to use a bread with soft crust for when you pinch the 2 pieces of bread together. This recipe is wonderful. I have a very picky son, but he thought this was "quite tasty" and loved it. I did change the bread to sourdough french bread. I'm glad I made this change, it gave the french toast a very good flavor. I also was running out of time to make the sauce, so I took about a cup of strawberries and put them in a microwave bowl with pure maple syrup and heated it for a minute. It was delish! This recipe was great! Though I had to put a spin on it. I realized at the last minute that I didn't have any eggs to make french toast so I ended up making pancakes.
