Strawberry Pretzel Salad

Ingredients
  • 2 cups crushed pretzels
  • 3/4 cup melted butter
  • 3 tablespoons sugar, plus 3/4 cup sugar
  • 1 (8-ounce) package cream cheese
  • 1 (8-ounce) container whipped topping
  • 2 (3-ounce) packages strawberry gelatin dessert mix
  • 2 cups boiling water
  • 2 (10-ounce) packages frozen strawberries
  • 1 (8-ounce) can crushed pineapple
  • Whipped topping or whipped cream, to garnish
Directions

Preheat oven to 400 degrees F.

For the crust, mix the pretzels, butter, and 3 tablespoons of sugar. Press this mixture into a 9 by 13-inch pan and bake for 7 minutes. Set aside and allow to cool.

In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar. Fold in the whipped topping, and spread over the cooled crust. Refrigerate until well chilled.

In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly. Add the strawberries and pineapple, and pour over the cream cheese mixture. Refrigerate until serving time.

To serve, cut slices and serve with a dollop of whipped topping.

I made this for a youth group last nite and they like it, but no raves. My friend made a similar dish years ago, but was better, so I'll look for her recipe. I think "salad" is a stretch, even for a jello--- event the teens waited to eat it for desert; vacuum repairman saw me put it in fridge, and called it "cheesecake"--little more accurate maybe. Could have fit much better in a larger casserole I feel--was overflowing mine. I have been making this recipe for years, especially at family (holiday BBQ's. The best and funniest compliment that I received about this dessert is "Are there any drugs in this dessert"?. It really is that addictive. Paula doesn't specify, but I use salted pretzels in the recipe. It gives a nice sweet/salty flavor that I enjoy. This is an easy recipe to convert to low sugar. We have several diabetics or people on low carb diets in our extended family so I have been making this with less sugar for years and no one can tell the difference. I use sugar free jello and splenda sweetened frozen strawberries (Kroger makes them in my area, I get sugar free cool whip for the middle and use less sugar than the recipe calls for in the crust and the filling. I have tried half sugar with a little splenda, stevia and equal spoonful blend and it worked but would not add just splenda (odd taste - but equal spoonful worked best if just adding one type of sugar substitute. Been making this for years sans pineapple. I substitute one of the strawberry jellos for black cherry, and it elevates the flavors!! This is a great picnic dessert! I make mine with sugar-free cherry or raspberry jello, I rinse and well drain crushed pineapple. I use fat-free cool whip and reduced fat cream cheese...in place of the sugar I use agave sweetner...so good no one knows it is sugar-free! Love this recipe! I do make a few changes. I use fresh strawberries. I put the pretzels and melted buttter in the food processor to crush. I've tried putting them in a bag and using a hammer to crush but the food processor works better. Use wax paper to press the pretzel crust flat before baking. Drizzle extra butter on top if pretzel mix is too dry. This helps it stick together. Sprinkle sugar over pretzels before baking. Make sure you let it cool completely. When you put the whipped cream/ cream cheese mixture on make sure you have a tight seal around the pan. I had a leak once and the whole thing was ruined. The pretzels turned into a soggy mess. I put it in the freezer after I put it on and let the jello cool completely on the stove. My co-worker introduced me to this "salad" and passed along the recipe. I was in the store when everything I needed to make it was coincidentally on sale! I pulled up this recipe to make sure I had everything. I didn't use the pineapple and opted for fresh strawberries (I added about 10 ice cubes to the gelatin after dissolving the mixture and refrigerated for about 10min before adding them. I also placed extra sliced strawberries on top for garnish. I made this for Easter dinner dessert, my family and friends LOVED it and requested it become a staple dessert at family affairs. It's so quick and easy and tasty, I have no issue sharing this again and again! Has anyone tried with other fruit/gelatin flavors? I am not much of a cook but figured I could handle this. It was my task to bring a dessert to a company Christmas party. (lunch I read many of the reviews and think the most important thing I followed was to be sure each layer cools before adding a new layer. The recipe is easy to follow & the results were impressive, especially considering I am the one who usually brings a bag of chips with some dip or store-bought potato salad. This really is more of a dessert than a salad. It is super sweet but everyone loved it & asked for the recipe. One reviewer said he/she kept the pretzels coarsely ground. I made this for a church picnic and I only got a little taste of it. There were all kinds of desserts and mine was the first one to go. Make sure to "seal" the pretzel crust well by covering them completely with the cream mixture- make sure that this is cool and that the jello is slightly set so that it won't be so warm and runny to get to make the pretzels soggy. I have made this several times, as well as my husband. Here are a couple of tips. I sprinkle a little sugar over the pretzel prior to baking, forms a nice crust, prevents soggy pretzels. I made this for Thanksgiving, and it was the only dish that was gone at the end of the meal. Everyone loved it, so I made another pan to eat with the Thanksgiving leftovers the next day. It is terribly unhealthy, so when I made it again this week I used low fat cream cheese, cool whip light, cut the amount of butter by 1/3, and cut the sugar in the cream cheese layer by half. This is my all time favorite dessert, not only a dessert but sometimes I enjoy it as a small snack during the day. This has been a family tradition especially around Christmas time. Since I joined the military, I havent been able to get my mom's home cooking or her Strawberry Pretzel salad, so I turned to Paula Deens's recipe and made it for me and my fellow Firefighters at the Fire House on base. Wonderful Dessert..I made this for Thanksgiving covered dish at my job and everyone loved it. Here's a few tips: Spray the pan w/baking spray before adding crust. make sure each layer is cool before adding the next layer. Crust doesn't need to cook no more than time given and simply poured pretzels in a ziplock and crushed, added sugar to the melted butter before adding pretzels. After the oven I put in freezer for 10 min. I used extra creamy whipped topping! It's the holidays, why not eat good! Also I used Dole frozen whole strawberries (10 oz), sliced them while frozen to make it easier. Allowed strawberries to thaw but not all the way to help Jello set better. After adding the cream cheese mixture, put in freezer again for about 5-10min to help set and then put in refrig while I prepared the jello topping. Everything came out delicious! This is a great recipe. It was so easy to make and I didn't encounter any problems that previous posters mentioned. Just make sure that you completely cover the pretzels with the cream cheese and it won't get to the crust. I didn't even wait for the crust to cool completely, or for the jell-o to set that much (and, I thawed the strawberries). But, each layer stayed seperate. In terms of the pretzels, a previous poster said that s/he pulverized them...I did NOT do this. I actually broke pretzle rods into very course pieces and baked for exactly 7 minutes. My family loved this at Thanksgiving. My mom asked me to bring a pretzel salad, which I'd never tasted much less made. I made this one by Paula for the first time and took it, and Mom said it was great. (Tasted wonderful to me too.) One tweak I made was to use one box of strawberry and one box of raspberry jello instead of both strawberry. The raspberry gave it a little extra zing that I liked. Do note that "crushed pretzels" means pulverized into dust so that the crust is like a graham cracker crust. I didn't realize that and my crust was a little too chunky.
