This recipe was fabulous. I'll probably never go back to the Green Peppers. The Red Peppers just sent this recipe over top.
Thank you so much for sharing!

Made it for my dad for fathers day. He loved it. My mother is the pickiest food critic in the world, but she loved it too!! My husband and I thought the combination of flavors were delicious!

I wasn?t all that impressed with these stuffed peppers. I followed the recipe exactly and overall I would have to say they were just so-so (not the best I?ve had, not the worst either.
For one, I?m not a huge fan of pork. Pork has a very distinct flavor to it. Some dishes it complements the flavors well, this was not one of them in my opinion. I think I?ll just add more ground beef next time.
Second, the cooking time was too short. The peppers came out pretty hard and crunchy. I like my stuffed peppers well cooked and soft so you can cut it with a fork (I had to use a steak knife to cut these. To me, a stuffed pepper should be soft enough that when you take a bite all the flavors and textures just sort of melt and blend together. With this recipe, the pepper was so undercooked the taste of the pepper pretty much overpowered all the other flavors and the hard crunchy texture oppressed all the other textures.
Third, I think I will be using green peppers next time. I think red peppers are a tad too sweet. I think green peppers have that nice, fresh, bell pepper taste without that added sweetness like the red peppers tend to have.
Overall, the meat mixture was pretty good. It seemed like a pretty strange combination of ingredients (sour cream, soy sauce, and cheese salsa, but they complimented one another well and were very flavorful.
Overall, the recipe was satisfactory. It wasn?t spectacular or anything, but I think it would make a pretty good base recipe that I can make a few tweaks with to accommodate my own personal taste.

I made this recipe for a group of friends for New Year's Eve, and it was a huge hit. All of the guys were skeptical when I told them the menu, but raved about it after just one bite.
