This recipe is great! It is one of my go to recipes. I make it time after time and it never fails!

Great recipe! I made a few tweaks to utilize ingredients I already had. My family is big into hunting, so instead of using beef and pork, I used ground deer venison and smoked pork sausage. Also, instead of using the jarred cheese and salsa, I used a mixture of shredded cheese (whatever you have in your fridge will work. After taking the foil off to cook them for the second time, I sprinkled cheese on top as well. I couldn't find bouillon granules, so I used two bouillon cubes and crushed them up with a knife. The recipe says to quarter the red peppers, but i figured it would be easier to half them and that worked just fine! This was a hit with my whole family, definitely a keeper recipe!

Love this recipe, but I modify it a bit. I use ground turkey instead of beef/pork, quinoa instead of rice, and I never buy "jarred cheese/salsa" so use parmesan or whatever shredded cheese I have in the refrigerator. I also use chicken bouillon instead of beef. I hope that cuts Paula's calories down a bit! But it's still great!

I'm not much of a stuffed pepper person, but I really liked these stuffed red peppers of hers. The filling was simply scrumptious and her stuffed red peppers recipie is DEFINITELY worth a try even for those who have stuffed pepper haters.

Do not look any further for a stuffed pepper recipe. This was fabulous. I made it and then went back to the grocery to buy more for another batch that very day!! Very yummy!! No need to change anything on this one!!
