    To make a long story short, these were easy to make and very good. Don't be scared to use substitutions for ingredients, and there is alot of them on here. These were a nice departure from the traditional "hockey puck" lump of meat stuffed into a pepper!

    We all love to share recipes at my Real Estate Office, and this one is making the rounds. Double the recipe and have dinner for multiple nights! Steaming the peppers in the chicken stock is great. The old recipe I used to use called for boiling the peppers prior to stuffing. This added another step and another pan. I also try to think ahead and have rice the night before, cook extra, and then you have rice the next day for the peppers, another step and time saver!!!

    I grew up eating the stuffed green bell peppers my Mom used to make with just the basic ground beef, white rice & S&P. So after googling "Stuffed Red Peppers" and finding this recipes I had to try it. What a find! I used brown rice with cream cheese and salsa. I also added some fresh basil and baby arrugula because I had some but this recipe is a home run now matter how you tweek it. I'm just amazed Paula didn't incorporate some butter into the recipe!

    I made these the other day and froze all but 1. This recipie is fabulous, easy and does well in the freezer. I changed 2 minor things due to what I had on hand. I used regular salsa and grated cheese and I used more beef/pork and rice than the recipe called for. I would definetly give it a try. Thanks for another amazing recipie Paula!

    I made this tonight and it was fantastic, I have leftovers for lunch too (always a good thing. I didn't use the ground pork, just didn't have any, I would also suggest that you watch how much salt goes into this dish it contains salty soy sauce and beef boullion plus more salt..........mine wasn't salty but I didn't use as much as called for. PAULA IS GREAT, topped this off with her rice pudding for dessert........OH MY.......Larry, Denver

    Surprisingly, I found this recipe quite bland and not all that great, considering how long it took to prepare and how much all the ingredients cost (around $45 for everything. After surveying the list of ingredients prior to cooking, I was sure this would be pretty close to a gourmet-tasting meal, as most of Paula's other dishes are very tasty and rarely disappoint. This particular recipe, however, fell COMPLETELY flat in terms of both taste and cost effectiveness per meal. All I could really taste when eating it were the peppers themselves with the FAINTEST hint of the beef mix. Overall, not worth the time it took to prepare it, or the price and I would definitely recommend trying a different recipe of Paula's as opposed to this one. Steer clear.

    I didnt have any jarred cheese so I used Gouda cheese, diced. And instead of Rice I used Orzo. I also added more Gouda the last few minutes of baking...I baked it 30 min. @ 350 and 10 more minutes after I added the extra Gouda. These were by far the best stuffed peppers that I ever had. Thanks Paula!!

    I don't like stuffed peppers, but my husband loves them!!! My kids devour them. The best recipe by far!!!!
