I altered this recipe by using melted butter instead of oil, I used 1/2 white sugar and 1/2 brown sugar, and I used 3 tbls cinnamon, a little nutmeg and allspice, shredded carrots and roasted walnuts. It turned out great! Very flavorful and moist. Like a lot of other reviewers I would use less oil/butter. By using butter the cake had a nice richness to it! This was by far the best carrot cake we've ever eaten, and everyone thought it came from a bakery! :

I did this exacally as the recipe said and well...it did not turn out well. The batter had a good flavor but when I made it into cup cakes it turned out too touch. Not something I will try again. Sorry...

I tried this recipe for the first time tonight. I thought it was super simple and the overall taste was good. The only mistake I made was making it in a 9x13 pan. It took way too long to bake and this caused my edges to be a tad bit crispy. I am going to do the resipe over again using 3 8" pans and see what happens.I added roasted pecans to the icing to give more spunk.

This cake was a definite hit! It was so easy to make I couldn't believe it was a Paula Deen recipe. I added shredded carrots, walnuts, raisins and coconut for a true carrot cake taste, but it was wonderful - very moist and delicious. The icing is a huge hit as well. Thanks Paula!

I loved this cake! Next time I will add 3 jars of carrot baby food to give a stronger carrot taste and only add 1 cup oil. But my husband loved this cake!

I have been meaning to do this for a year or more I first saw this recipe when you intro Baby Jack on the show it was at night and I tried it after then I have been taking props for this cake every since. A lot of people say Paula has good looking Recipes but I anm watching my diet and then I have to let them know where I got recipe from and then look at how the faces change ! I am good at this recipe now Thanks Paula I love your cooking and I am a diabetic but I can altar some things and it still tastes just as GOOD !!!!!!!!!!!!!!!!!!!!!!!!

Made this cake for my Husbands 40th Birthday his fav is carrot cake. This was not the first carrot cake that I have ever made but was my first homerun.My Birthday boy said I out did myself. I add two carrots I like to see the orange flecks and walnuts for tradition sake . Thank you for another great recipe that makes me shine. It was an effortless cake that tasted like a million.

Who would have thought of using baby food? My daughter left some of my granddaughter's food behind after a visit so I just had to try this recipe. I now keep some in my pantry so that I can make a cake without a visit to the store.

Made this for my my grandma's 93rd b-day party. Took other reviewers' suggestions and made a few changes; added a few grated carrots, substituted unsweetened apple sauce for half of the oil, added some vanilla beans and used reduced fat cream cheese for the frosting. I'm sure the original version is pretty great, but I was very happy with how my slightly lighter version turned out. Not only did this recipe taste great, but it was super easy to make.
