This cake was EASY to make and delicious; however, it did not taste much like a carrot cake. It reminded me of a spice cake or pumkin cake - it could have been the baby food i used (sweet tender carrots stage 2 by beechnut. I will cook it again and add grated carrots. I also added nutmeg which could have put it over the top towards a spice cake. You live and learn...

LOVE IT! I made this cake to take to work for a going away party and noone belived that it was homemade. I'm in my early 30's and on the go all the time. Though I love to cook, and produce some of my own masterpieces, I was looking for something quick, easy, and completely wonderful. I found it in this recipe. I added some raisins and about a cup of grated carrots for some texture and a dash of vanilla into the cake itself. Everyone demolished it before I could blink my eyes and asked me where I got it from, I vhemently denied that it was store bought but noone believed me. I'm taking that as a compliment. Thanks Paula!!!

I was slightly hesitant to make a cake with babyfood in it, but it turned out great!! It wasn't overwhelmingly carrot tasting, which was also a surprise. It was very moist and super easy to make. I made it for a friend's birthday and everyone loved it. People were a bit surprised when I told them the "secret ingredient" but they love it anyway. Oh, just as a comment for others, the main difference between stage 2 and 3 babyfoods is just the amount of food in the jar. I used 2 stage 2 carrot baby foods (beechnut that were 4oz each. It worked great!

My family all enjoyed this carrot cake. It has the flavor of a traditional carrot cake, but is a lot quicker and easier to make. I didn't have 3 round cake pans and so substituted a 10x14-inch pan and baked it for about 40 minutes. I also topped it with chopped pecans. One problem with the recipe, however, is that it gives a confusing measurement with the butter, as 1/2 cup of butter is actually 1 cube instead of 1/2 cube. I used the 1/2 cube and I think it was right.

What a delicious cake. Carrot cake is my all time favorite cake, but this recipe was so simple and absolutely delicious. I like nuts so I added a cup of chopped pecans to the batter. I think it added to the flavor. My family absolutely loved it.

This is the best carrot cake ever! Carrot cake is my personal favorite dessert and this is the best recipe I've tried yet! Not too sweet, and the right amount of cinnamon. Love this cake!

My family and I loved this recipe. We were looking for an easy/yummy carrot cake recipe to use for my mothers wedding cake and this was the first and last one we found. When you find something great there is no need to look any further! Thank you Miss Paula!
