I've made this twice since I downloaded it last week. We first had it at a family gathering and my then 7 year old ate 8 of these, double-sized, lol. The first time I made it, I baked the bites on a cooling rack for 30 minutes. They were ok, I just felt like they were missing a lot of flavour, because the recipe uses chicken breast. I had also sprinkled the chicken chunks with salt and pepper, thinking ahead, but that didn't help. It was still a popular dish at our Halloween party.
The 2nd time I made these, I baked them straight on the foil-covered pan instead of using a cooling rack and I baked them until the brown sugar had caramelized, so the bites were much browner than the first time. I had forgotten to sprinkle the chicken with salt and pepper before wrapping with bacon strips. Anyway, no matter because these were MUCH more flavourful than the first time had made them. They were gone within minutes!

Best go to appetizer ever. I've made these for six years now and EVERY time they're a big hit. I wrap them and dredge them the day before, cover with plastic wrap and set them in the fridge until party time. I pull them out and they're ready to go and oh so good. I cook them at 400 for 30 minutes. They come out crispy and done perfectly every time.

Wrapped in bacon with a hint (or KICK! of spice? I knew this wouldn't go wrong! Makes me look like I know what I'm doing - hah. Great appetizer. Best served after it cools a bit from the oven.

Perfect for an appetizer ! However, I baked at 325 degrees for 20 minutes then turned over. Then baked at 325 for another 20 minutes (in order to get bacon done on all sides. Then turned up oven to 350 for 10-15 minutes to get a little crisy. Let sit at least 15 minutes then serve.
I also seasoned chicken with chili podwer and Pampered Chef Buffalo seasoning prior to wrapping with bacon.
