Ingredients

  • 6 ripe mangos
  • 1/4 cup butter, melted
  • 1/4 cup white sugar

Homemade Raspberry Coulis:

  • 3 cups raspberries
  • 2 tablespoon lemon juice
  • 6 tablespoons sugar
  • Vanilla ice cream
  • Raspberry syrup, for serving
  • Fresh raspberries
  • Mint, for garnish

Directions

Halve mangos and brush cut sides with melted butter. Sprinkle with sugar and grill cut side down, over medium heat for 4 to 5 minutes or until mangos are softened.

For the coulis:

Add 3 cups of raspberries to the food processor and purees until smooth. Strain through cheesecloth or strainer. In a saucepan, over low heat, add 1 to 2 tablespoons lemon juice, 6 tablespoons sugar and the raspberry puree. Stir or whisk until sugar dissolves.

Serve mangos with warm raspberry coulis, ice cream, raspberry syrup, fresh raspberries and mint.

    Paula, what can I "not" say! This recipe was a hit! I decided to make it for Cinco De Mayo for a work potluck and it was the iceing on the cake. One person said " I almost clocked back in from lunch late cause I was somewhere else"! Others had double portions! I will be making this again.

    WOW! Delicious recipe but the raspberry sauce took a while. Didn't have a cheesecloth so had to use a fine strainer and pressing to get the seeds out took some time. Did I do this right? The end result got great reviews but there must be an easier way with the raspberrries...

    This was delicious. I substituted frozen raspberries because fresh raspberries were so expensive. So simple and great!
