Ingredients

  • 4 large sweet potatoes
  • 2/3 cup packed brown sugar
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/2 teaspoon freshly grated nutmeg
  • 2 cups shredded coconut, sweetened
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 large marshmallow per potato ball

Directions

Preheat oven to 350 degrees F.

Bake the potatoes until tender, then peel and mash them. Stir in the brown sugar, orange juice, zest and nutmeg. In a separate bowl, toss the coconut with the sugar and cinnamon. Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball. Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

    I ENJOYED THE SWEET POTATO BALLS BUT I HAVE A FEW IMPORTANT SUGGESTIONS. THEY ARE DEFINITELY TOO SWEET EVEN IF YOU CUT THE... BROWN SUGAR IN HALF. SO, I WOULD DO LESS THAN 1/3 OF A CUP. I WANTED TO DO A TEST RUN, SO I MADE A COUPLE AND BAKED THEM FOR 16 MINUTES AND THEY SPLIT OPEN. WHEN I MAKE THE REST I WILL COOK FOR 13-15 MINUTES.     A few improvisations...

    I did a test run with these, and donated them after tasting. I added some heat; (watching too much Bobby Flay!) about a 1/2... tsp. cayenne pepper and 1/2 tsp. chili powder. Chilling the mixture first makes them much easier to work with and form. I did smaller balls with mini marshmallows inside. I added finely crushed pecans to the coconut. They are very good, and I am making more today for Thanksgiving. It is a nice change for using sweet potatoes.Read more

    I am planning on using this recipe for Thanksgiving. I am going to try it with the coconut, sugar, and cinnamon mixture for... some of the balls and then just the sugar and cinnamon mixture on the rest. I have family members that do not like coconut.
