This is a delicious recipe! I didn't have enough butter on hand so I substituted vegetable shortening. I also heeded a previous reviewer's suggestion to add vinegar and the result was a tender biscuit. Wonderful! I served these gems with honey butter.

I have never made biscuits from scratch before and was a little nervous about making these. They were quick and easy to make. The taste was WONDERFUL! They were light and fluffly. I will definately make them again!

After reading some of the reviews about the biscuits being a little flat, I thought I'd give a little twist to this recipe. I followed the recipe as instructed, but I added about 1/2 tsp vinegar to the sweet potato as I mashed it. My biscuits were light and fluffy - not flat at all. Don't worry, you can't taste the vinegar. It just helped the baking powder do it's job.

My family loved these biscuits! I flavored my sweet potatoes with cinnamon, nutmeg, and vanilla while they were boiling and also added 1 cup to the dough instead of the 3/4 cup called for. They didn't get very tall, but they were light and fluffy inside. I don't really think this recipe was designed for the biscuit to be very tall like a buttermilk biscuit. Mine look just like the ones in the photograph anyway. These are also an easy way to get my kids to eat sweet potatoes without them knowing! I will be making these again and again!

This was my first time making biscuts from scratch. I made them small in two to three bite size. They were a big hit at thanksgiving dinner. They were delicious. I will definately make them again.
