Ingredients
- 2 tablespoons vegetable oil
- 4 sweet potatoes, peeled and cubed
- Salt
- Sugar
Directions
Preheat oil in large cast iron skillet or deep-fryer.
Place sweet potatoes in a large saucepan and cover with cold water. Bring to a boil, reduce heat, and cook until slightly tender, about 10 minutes. Drain the sweet potatoes well in a colander.
Add sweet potatoes to skillet or deep-fryer. Cook undisturbed for 5 to 6 minutes until nice and crisp. Garnish with sugar or salt, to taste.

Loved the sweet potato fries, but I have to say that I'm glad that I live in Houston, Texas and I'm able to walk into House Of Fries and get the most wonderful tasting Sweet Potato Fries.
Ms. Paula, if you are ever in Houston stop by House of Fries and give their food a try and I'm sure that you will love it.

These are super easy to make and a great alternative to regular home fries. Because I couldn't make up my mind between sweet & salty - I used both - yum! Thanks Paula!
