this might be the ONLY Paula Deen recipe that could be diet friendly. i used ground turkey instead of beef, fat free catalina, and sauteed the onion with the meat because im not a fan of raw onions. this was delicious. the key to this dish is the catalina! i will be eating leftovers for lunch.

I was looking for something to make for Cinco de Mayo and thought the reviews for this salad looked good; wrong, it was GREAT!! This is more like a meal than a salad, the flavors all together were incredible. You've got to try this-I can't wait to make this over the summer for cookouts and other parties; it will be a huge hit!

I made this last night, and it was fantastic. instead of the Catalina i used some cilantro dressing i found at trader joes, and it went perfectly with the mild salsa i used as well. I just used a bit of salt to cook the meat and that was it! So much flavor!! And its cheap too! :

stop eating this salad. Why do you do this to me, Paula. I eat far more than I should, because it is incredibly and viciously delicious. I return to the fridge in the evening to pig out on the leftovers. Shame on me. But, I'll do it again...hehehehe.
as if this recipe weren't fattening enough, it tastes even better if you mix in a little ranch dressing as well. :P

I have made this recipe about 4 times now. Each time I do something a little different with it. I like this recipe with ground chicken better than ground beef. Each time I make it, my sons (8, 10, and 11 years old cheer. They love it and are not big salad eaters. The Catalina dressing is a bit sweet for my husband and I but it makes a good binder for this salad making it easy to serve. I usually separate the adult salad from the kid salad when it comes time for the dressing. I love seeing my boys go for seconds on salad.
