Tennessee Banana-Black Walnut Cake with Caramel Frosting
A cake worth the time
This is a wonderful cake that is full of suprises. While I was unsure about the two over-ripe bananas, Paula is true to her word. What a marvelous cake this is to take to a church function. The ladies and men at the church "raved" about this cake. Kudos to Ms. Paula..you are a true chef in your own right. I will take you over any Iron Chef..any day of the week!

Expected Better
I feel this cake is too dry and the frosting was way too sweet for me.

yum!
don't really need extra walnuts on the outside since they are so expensive. you can really taste them on the inside only.

disappointed
I thought this cake was a bit heavy and dry. I guess I also found out too how much I dislike black walnuts. I did like the frosting recipe, which is similar to one of my grandmother's. I tried this cake twice to be sure...and will not make it again.

The cake seemed a bit dry to me and the frosting was too sweet for my taste. I love to bake with black walnuts, but have a black walnut recipe made with coconut that I feel is more moist.

Reminds me of my grandmother's....
Very good cake. I substituted pecans for the black walnuts and it came out great.

MMM!MMM!
Since my husband can't tolerate bananas, I tried the Caramel Icing (1 and 1/2 times recipe) on Paula's 3 layer Basic 1234 cake and it was fantastic! The icing is easy to work with as long as you add the cream as needed to thin it while spreading on cake. Thanks, Paula.

Mine didn't come out so great...
I guess I should have watched it a little more closely because it cooked in half the time even with my oven turned down, and was very hard. The cake was dry and I actually have a much better recipe for a banana cake that is very moist. But the icing was delicious. Not sure if I would make this cake again, but the icing I will for sure.

Really good Tenn B/B cake
my parents are from Tennessee, so Mama was thrilled to have something made with black walnuts...cake was nice and moist, rose nicely, and...being from the south, any kind of caramel icing is to DIE for! :)
