    I have made this recipe more times than I can count of the last couple years and it is a HUGE hit everytime!!! I leave the cinnamon out of the ice cream though, just because I love homemade vanilla ice cream. Thank you Paula!!! Crap, just typing this makes me want to go make it now!!! It is that freaking good!

    I love cinnamon ice cream and have been trying to duplicate the flavor of Dolly Madison's. I found Paula's recipe and did a bit of doctoring to it and now my family thinks this is the closest to Dolly Madison's as you can get. I now skip the step of cooking the half and half with cinnamon sticks (just omit the sticks because to me it didn't add enough flavor to make it worth it even after using double the amount of sticks. This also saves time cooling the mixture down. I also don't need to add the 2 quarts milk listed at the end of the recipe because the recipe fits perfectly in two 1 1/2 quart canisters of my Cuisinart ice cream maker. All the rest of the ingredients and steps are the same as Paula's recipe with the following two exceptions: I add cinnamon powder (to taste and 10 to 12 drops of cinnamon oil (to taste; I buy this at my local spice shop. This step is what kicks this ice cream out of the park! My family adores this recipe.

    I am not a big cinnamon fan, but I tired it. It was pretty good! I think next time I will just use vanilla ice cream though and add a little cinnamon on top.

    I love these and they were sooo very easy to make!! They are wonderful desserts for guest because they look so pretty, too. FYI tho, I would keep a close eye on the shells while cooking them...it takes less than a minute--my first couple burned! :

    This recipe was sooo good. I had left over tortillas so I decided to try it. Very quick and easy and YUMMY!!!!

    This is very very easy. I skipped the step of infusing the cinnamon and jusy added 1 teasp of vanilla (no cooking, and it was the best vanilla icecream. It almost tastes like the custard vanilla you have to cook, but without all the time. This is a great base recipe. It also makes alot.

    The ice cream is sooo creamy!! I added some red food coloring to give a more cinniamon look. Also, instead of frying mine, i baked mine and cut them to make chips in order to make it easier to eat. It is sooo delicious!!

    All of these ingredients are "on hand" at all times in my house so this can be made for any occasion.
    Also the ice cream can be made ahead of time and Mexican Cinnamon Crisps can be bought at WalMart to set the ice cream on and eliminate the "cooking" part during hot summer days.
