    I was very excited about trying this potatoe salad since we always have it the traditional way so i decide to make it with broiled prosciutto instead and i added 3 green onion instead of 1. me and my boyfriend loved this recipe.... thanks!!!

    Taste amazing! I don't even like potato salad but was asked to bring a dish to a party... thought this looked simple and a classic dish and it turned out delious!!!

    This potato salas was very simple to make, especially since you don't have to mess with peeling the potatoes. I made the mistake of not cooking the potatoes QUITE enough so it was a little crunchy. The hardest part of the recipe is cooking the potatoes to just the right point...soft, but not so soft they mash when you mix the salad. Beyond my own error, the flavors in the recipe were really, really good - the bacon makes it wonderful!

    This is definately a nice twist on the classic potato salad...and my family loves it! It definately helps that it has bacon in it! Bacon always makes everything better!

    Followed recipe and added 1 more green onion and 1/2 stalk celery. Used lowfat Hellmans. My husband thought it had a bit too much bacon so next time I'll do 3 slices.

    To get hard-boiled eggs without the dark circle: Put eggs in a small pan - cover w/ plenty cold water - bring to a boil - remove from heat right away and cover for 10 minutes - then set eggs in ice water bath 10-15 minutes.

    Make sure you add the bacon grease in at the very beginning of boiiling the potatoes! I like a little more tang to my potato salad, so I added more dijon and an extra onion stalk. VERY good.

    I make a potato salad that is VERY similar and always goes over big. I'm always asked to bring it to parties. I don't add the onion or mustard, however I DO add some of the bacon grease which really makes a difference in the flavor. Also you may need to add a little more salt and pepper to your taste and if you like more mayo you can always add more, but I always keep just a little under creamy then you taste everything and not just mayo.
