    My husband has always claimed to hate potato salad but he loved this! I also took this recipe to church and the bowl was empty at the end of the night.

    Good, but a bit dry for me. Not as wet/creamy as other potato salads. Obviously a taste preference as to how one likes their potato salad to be. Still, a good taste with the bacon and a easy recipe to follow with few, simple, basic ingredients.

    i've made this recipe 4x this summer, i have yet to have more than 1/4 cup. everyone loves it!!! and it's so easy, i keep making more.

    I just snuck a taste of this before I put it in the refrigerator to chill...I seriously will never buy potato salad again. The bacon and green onions just pop off of the dijon flavor. So, so good, I can't wait to have it with our burgers tonight.

    I used a Deli Mustard, grainy w/ some horseradish.

    I added chives, and sauteed yellow onions.

    I added a bit more bacon ;P

    And just a bit more mayo.

    THIS WAS THE BEST POTATO SALAD I'VE EVA HAD!

    I made this simple salad today and it is awesome! Tom Perini has a restuarant near Abilene Texas and he is a really good chef. This will be my dish at our next church lunch!

    I tried this salad because it was recommended by others. Everybody was right! Very very nice. I was impressed with the taste the addition of mustard gives. Goes very well with the rest of the salad. My only additions to the final dish were a little chopped up celery (about 2 teaspoons and cilantro for garnish. Highly recommended recipe!

    The ingredients are well balanced and the recipe is basic enough that you can modify it to your individual taste. I eat mostly vegetarian so to add some extra flavor I used yellow mustard instead of dijon (gives it a vinegar flavor and paprika to compliment the mayo. For extra crunch add celery.

    My husband says you can't go wrong with bacon. In this case, he's right. It was flavorful and easy. I tripled the recipe when we had a few friends over. There were hardly ANY leftovers.
