    This was the first Vegetable Beef soup I made from scratch. I made it for a church function...BIG hit! Very easy to make and oh so delicious!!! I have a feeling it will not be the last time I am asked to make this soup. Thanks Mrs. Paula for the wonderful recipe!

    My family and I LOVE this soup, I bought the dvd set with the soups episode, tried it out and it's been a favorite ever since! well done Paula!!

    Perfect Fall dish. My whole family and co-workers loved it. It makes A LOT. Next time I will cut the recipe in half for my family of 3. I just shared with a bunch of people this time!

    I made a few modifications since I like LOTS of flavor and someone said it was a bit bland. I used 2 quarts of beef broth and 2 quarts of water, instead of the bouillon granulates I used about a tablespoon of Better than Bouillon and added extra onion and a tablespoon of lemon pepper. plus switched out the elbow noodles for small shells (more fun. Ended up GREAT!

    i needed a quick soup for supper, as the temp plummeted overnight, so i looked this up. i cut up the short ribs into 1" pieces (i can cheat,i'm a meatcutter,then i browned them pretty well. added the "hard" veggies to carmilize, added real garlic and the spices, poured in real beef stock and the tommatoes. pressure cooked it for 20 min., then added whatever veggis i had, a can of beer, and simmered 1 hour. it came out very yummy.and even the sun came out while we were eating dinner.

    I substituted some of the veggies and it still made a great soup. You will need a LARGE stockpot!

    During these tough economic times, I've been making cheaper meals that will go a long way.There were vegetables that I omitted only because of personal preference.This is the first time I've ever made vegetable soup and believe me I will make it again before winter ends.My daddy would have been so PROUD of me !!!! Thanks Paula.

    I don't know what happened. I followed the directions to the letter. What I got for all my effort was soup that tasted like vegetables and meat in a broth with no flavor. I love Paula's recipes, but I will never make this again.

    Went to work in a snow storm and decided I wanted to make a vegetable soup to bring to work the next day. Found this recipe and on the way home got most of the ingredients. By the way, short ribs and beef back ribs are one in the same. Was unable to find a couple of the ingredients and used canned vegall for the vegetables. Prepared pretty much as called for in the recipe. First thought the Italian seasoning was a bit strong. The pot was still too warm to place in the fridge so I set it out in the garage which was well under 40 degrees. The next morning I took off the hardened fat, which also removed a large portion of the floating Italian seasoning and placed most of the soup in a crock pot. Warmed the soup at work in the crock pot and served with grilled cheese sandwiches. My co-workers really enjoyed it and several went back for seconds. Was able to freeze a large portion for later. For a first attempt I was very satisfied as well as was my co-workers. Worth the time and effort although its no where near as complicated as it looks.
