Being from the midwest I never tried okra until we lived in TX a few short months. Seems it was always slimy. Now that I have access to okra here in Florida I decided to try Paula's recipe and it has never failed to be perfect--never slimy! The only change I make (and no one knows is that I use Spenda in place of the sugar.

My two year old loved it. Next time I will use half of the sugar. It seemed to overpower it.

I love okra. I have been looking for a recipe for it other than frying. I tried this and it was delicious!!! I made it while my Mom was visiting and she loved it also. She went home with the recipe and made it a few days later. Thanks Paula!

From Paula... My husband and I love Okra and this was just another way to enjoy it. I was in the midst of planning my Mother's Day menu when I made this and this was the next dish on the menu. We love the hint of bacon in it.

Being from the south I'm used to eating good downhome cooked veggies, but man this sure put a twist on the way my grandmother fixed her okra. Don't get me wrong I loved my grannys stewed creole okra but the slight sweet flavor gave this dish that something extra. I loved it.

I mainly made this for my husband who likes okra. I didn't think it tasted slimey but just not sure I like it; however the tomato part is really delicious and I love tomatoes. We both thought it would be good over rice and I think next time I'll substitute zucchini. Very easy to make.
