Ingredients

  • 1/2 cup (1 stick) butter
  • 3/4 cup sugar
  • 3/4 cup self-rising flour
  • 1 cup milk
  • 1 (28-ounce) can sliced peaches in heavy syrup, un-drained (use fresh peaches if available; see note*)
  • Cinnamon, for sprinkling, optional
  • Vanilla ice cream or fresh whipped cream, for serving

Directions

*If they are available, by all means use fresh peaches. In a saucepan, mix 2 cups fresh peach slices with one cup sugar and one cup water. Bring the mixture to a boil and then simmer for about 10 minutes. Stir often, making sure the sugar is completely dissolved. Substitute this for the canned peaches.

*Cook's Note: The most important part of this dish is not stirring the mixture.

Preheat oven to 350 degrees F.

Put butter in a 13 by 9 by 2-inch baking dish and place in the oven to melt. Stir sugar and flour together and mix well. Slowly add milk and continue stirring to prevent the batter from lumping.

Being careful not to burn yourself, remove hot baking dish containing melted butter from oven; pour batter directly over butter in baking dish. Do not stir.

Spoon fruit on top of batter, then gently pour syrup on top. Do not stir. Sprinkle cinnamon on top of batter, if using. (The most important part of this dish is not stirring the mixture at this point in the recipe.)

Bake for 30 to 45 minutes or until golden brown. Your batter will rise above your fruit, producing the most wonderful of crusts. Serve warm with vanilla ice cream or fresh whipped cream.

So, I searched for this recipe on other sites and... found there are many versions all with the same ingredients; however, the measurements are different. It's too bad.     Peach soup

    We had peach soup instead of peach cobbler when I made this yesterday. I made it exactly as the recipe on line states,... except I substituted Splenda for most of the sugar and used 3 C. Ifresh peaches. The self-rising flour did not rise. I knew I was in trouble when I poured the runny dough into all that butter. I even called my husband out to the kitchen to look at that sad dough sourrounded by all that butter. I went ahead and made it anyway. When finished, it looked pretty bad. Along the edges there was a little bit of batter, sort of. In the middle was mush. Somewhere in these reviews someone made the suggestion NOT to pour all the juice into the pan. I agree, that may have helped but I will never know because I won't make this recipe again. My husband thought it tasted ok but then he piled vanilla ice cream on top. Ice cream makes a lot of things taste better. One question, can self-rising flour lose it's rising ability? I've had mine for quite some time. Maybe that is the problem.     "Not Enough Peaches"

    The dough in this recipe turned out fine using self-rising flour. I used fresh peaches in my cobbler. I increased the... amount of peaches to 3 cups instead of just 2 cups and I decreased the amount of sugar to 3/4 cup. I feel that I could have doubled the amount of peaches in the recipe to 6 cups! The recipe was for a "peach" cobbler. The dough tasted good, but there was too much of it.Read more
