This was a pretty easy recipe for a novice homemade mac'n'cheese maker like myself. It was a huge hit, and I made a huge pan and every bit of leftovers was eaten. I did use heavy cream instead of milk, but ended adding a bit more milk to mine. I also seasoned with garlic and a bit of ground dry mustard, and I did the panko bread crumb topping. Either way, it seems very adaptable to individual tastes.

I brought this to a family camp out potluck, and it was the talk of the potluck! From the youngest to the grandma's and grandpa's, I kept hearing people talking about how good the mac n cheese was. Very, very easy to prepare at our campsite! I have also made this recipe for a middle school camp out, and the kids still come up to me and say how much the loved it! When I started making it this weekend, the youth pastor asked if I was making it, and was happy to hear that it was! Thank you Paula for a great recipe that serves a large crowd and that tastes soooo good!

Some times the most simply things turn out to be the best. This recipe was just that, the best. Not a whole lot of hoopla. Thanks Paula D.

I have made it several times a year for several years now and I find it turns out creamier if I cut it back to 2 eggs and mix everything except the macaroni together well first then add the macaroni. If the macaroni is hot, put a little in at a time to temper the egg mixture so you will not get the seperation. Do not over cook macaroni but make sure it is just covered with the liquids, even if you have to add a little more milk or a little of the pasta water. Also do not cook until it is dry in the oven because it will continue to cook after it comes out of the oven and it will become over dry.

I tried this recipe last week and it turned out great! VERY EASY! The texture was great with the egg and sour cream. I think I'll add more cheese next time, 2 cups didn't seem like enough...

I've made this about a dozen times now & get a much better recipe if I thoroughly mix the milk, eggs, sour cream, butter. Also, you have to thoroughly mix the slighlty under-cooked macaroni with the grated cheese very well. It takes about 4 extra minutes and the outcome is magnificent!! Take your time & you'll be pleased. When I don't mix the liquids well - I get pieces of egg or an egg casserole like a few people posted that they did not like in this recipe. Mix things better & you'll be pleased.
