Ingredients
  • 1/2 bell pepper, chopped
  • 1 green onion, chopped
  • 1/2 large carrot, chopped
  • 1/8 cup chopped fresh parsley leaves
  • 1/2 cabbage head
  • 1/2 cup mayonnaise
  • 1/2 teaspoon seasoning salt (recommended: Jane's Krazy Mixed-up salt)
  • 1/4 teaspoon coarsely ground black pepper
  • 2 tablespoons sugar
  • 1/4 teaspoon lemon-pepper seasoning
  • 1 tablespoon white vinegar
Directions

Using a food processor, gently process the bell pepper, onion, carrot, and parsley, being careful not to over process. Cut 1/2 of the cabbage into chunks and place in the food processor and process lightly, making sure the cabbage doesn't become mushy. Slice the remaining cabbage thinly. Mix the cabbage together with the processed vegetables. In a separate bowl, mix the remaining ingredients together and allow to stand for a few minutes. Combine the mayonnaise mixture with the vegetables and toss. Chill for 1 hour.

Wow! Like many of the reviewers have already posted, I wouldn't say I'm a big fan of coleslaw necessarily. I do like to top a shredded bbq sandwich with some, though, so I made up a batch of Paula's slaw last night to give it a try. It was WONDERFUL. I'd happily eat this slaw on its own, no sandwich involved. The bell pepper and green onion give it a layer of flavor that's unexpected and enjoyable. Really good. I doubled the recipe so I put the vegetables in the food processor first, then I did the cabbage. I also used some purple cabbage for color. I have searched for years for the perfect coleslaw recipe. After trying countless others I would always end up just driving to the nearest KFC and bringing home a container. I made this coleslaw for my husband's 25th birthday bbq. We are known for our annual Leon Day / Hubby Birthday bbq. I wanted to make it super special because it's only once you become a quarter of a century old. I was nervous making a recipe for 20+ people that I had never tried, but I took that leap of faith. IT. I normally don't care for a mayo base slaw, but I wanted something different then vinegar/oil base.. I doubled the recipe because I used a bag of slaw mix. I also substitue the white vinegar and used apple cider vinegar and less sugar. I also substitue the green onion with a sweet onion, about a 1/2 cup.. This is the best creamy slaw mix I have eaten. I normally rave over Paula's recipes. I made this coleslaw for a holiday party & I got a couple compliments, however, I felt I should have doubled the mayo and spices. My cabbage made a lot of coleslaw for a half cup of mayo. I like my coleslaw a little dry but not that dry. I didn't have a chance to chill it for more then an hour before I had to take it to the party so maybe its better if left for several hours.
