    I made this recipe for a group that would just as soon have their macaroni and cheese out of a blue box. I doubled the recipe but only used 4 eggs. I did hold aside about 1/2 cup of cheese to spread on the top for the last 5 or 10 minutes and then turned the broiler on for the last minute or two so that it would brown a little and crisp the top a little. It was awesome. Everyone loved it and they are insisting that this is the only mac n cheese we have from now on.

    I also reduced the amount of egg to just two eggs. I admit it was a bit dry the first time I tried it but I made some adjustments. I use Evaporated Whole Milk or Half and Half to add a more creamy taste. The consistency was not unlike some others I have tried. To get a really creamy mac and cheese I think you need to stick to stove top. Also, if you want to prepare in advance you can cook the pasta first and cool down, slightly beat the eggs then add the sour cream and milk then add to pasta then add the cheese. Top with butter before baking. I also take it out of the fridge and let it come slightly to room temp. Fits an 11 x 7 dish perfectly. I also made this using gluten free pasta and it was a hit.

    I love Paula's cooking; however, she adds a little too much of the high cholesterol ingredients so I don't use many of her recipes. However, I always like to see what I can do to use something similar and change some of her rich items. It works like a charm. With this recipe I added garlic, onion, grated carrots and celery. I did eliminate the eggs. Doesn't need it at all. It was great. Thanks, Paula. We still love you. How do you get away without having high cholesterol? You're lucky if you don't.

    This is a definite go to recipe for me. The first time I tried it, the eggy flavor threw me off, but I just reduced the amount of eggs that I put in next time. One thing I do is put onions & garlic in the dish for added flavor.

    I was very disappointed with the taste and overall consistency...I will not make this recipe again,,,however,,,I will try some of Paula's other Mac n Cheese Recipes. This was just a waste of money and time.
