I cooked the catfish with the cole slaw, oh my God, the mustard gives it the perfect saltiness and the filets were so wonderfully crunchy and nevery got soggy. verrrry goood.

I wanted to try this right away but only had chicken breast. Wow....who needs the fish! This was super! I didn't do the bean cakes but they sound real yummy also. Thanks, Paula!

I didn't have any catfish, but had some chicken that I needed to use...so I marinated it with the mustard and thyme overnight and fried it up the next day....it was absolutely mouth-watering...I may make fried chicken this way from now on! Can't wait to try it with the fish!! The pea cakes were a wonderful complment to the chicken! Very different but with a wonderful flavor!!

Thanks Paula for this great recipe! My husband usually doesn't like cat fish but, especially loved this, especially with the black-eyed pea cakes. At first he asked for the tarter sauce but, I told him he wouldn't need it. The mustard/thyme marinade did the trick. I will definitly make this again.
