Ingredients

  • 3/4 cup finely diced tomatoes
  • 2 teaspoons finely diced onions
  • 1 teaspoon finely chopped fresh basil leaves
  • 1/2 teaspoon The Lady's House Seasoning, recipe follows
  • 1 package mini phyllo shells
  • 1/2 cup packed shredded mozzarella
  • 1/4 cup mayonnaise
  • 4 tablespoons real bacon pieces, or more as needed (recommended: Hormel Real Bacon pieces)

Directions

Preheat the oven to 350 degrees F.

Place the diced tomatoes in a colander. Sprinkle with the onions, basil, and House Seasoning, and toss to coat. Allow to drain, stirring occasionally. Fill each phyllo shell with a scant tablespoon of the tomato mixture. Stir together the mozzarella and mayonnaise. Frost the top of each shell with a scant tablespoon of the mozzarella mixture. Sprinkle each shell with 1/4 teaspoon of bacon pieces. Bake the filled shells for 10 to 12 minutes. Serve hot. These may be prepared ahead of time and refrigerated until serving time.

House Seasoning:

1 cup salt

1/4 cup black pepper

1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

    Another goodun, Paula! So easy and flexible. I used fresh tomatoes b/c neighbors still have them growing. Key is draining... REALLY well, no matter what kind of tomato you use. I used shallots instead of onion and sauteed them. ( her recipe calls for 2 tsp of onion but then doesn't include them in the directions). One could use fresh bacon and saute the onions in the same pan after cooking the bacon. I also used shredded Italian mix cheese instead of mozzarella. The change-ups for this recipe are endless. It's a great foundational recipe. To Pat: You go from freezer to filling to baking with the phyllo shells.Read more

    These were absolutely great the first time I made them, but my family is partial to spicy/hot foods, so I added one finely... chopped jalapeno to the recipe. I could have added more for more heat, but to me this was just right. We'll be eating these for years to come - thanks Paula!!Read more

    After watching the show on Monday, they sounded so great that I made them Wednesday. I had all the ingredients except the... mini phyllo shells, but I had a box of phyllo sheets in the freezer. I made the whole recipe, took 4 sheets of the dough, and put them in a muffin pan (for 6). It was obviously not a finger food this way, but boy, how good they turned out! I had two and my husband polished the other 4 off. I will definately buy the shells next time, and serve them with pride at my next cocktail party.     I made this for the first time on Easter Sunday. It was such a huge hit! I doubled the recipe, but next time I will make a... ton more. I used Diced Tomatoes with Garlic in it.. About the salt reviews.. I hope you guys didn't think to put that entire cup of salt in just one recipe because that's intended for many recipes.! Read more

    A little less on the mayo and cheese please. In response to Della: Why are you rating a recipe you haven?t tried yet. ... Sorry to hear about your financial troubles, but hello everyone is having a hard time these days, some harder than others, at least you have a job. Watch Dr. Phil and not Paula. Lastly, one cup of salt in any recipe is way too much. Read more
