I drained the tomatoes for an HOUR and still had soggy crust even though I prebaked it. It's tasty but does not cut and serve well. I am considering the "ritz cracker" solution because they are delicious, Paula uses them regularly, and they'd be a useful as well as tasty addition to the filling, absorbing yummy tomato juices without taking over from the tomatoes. Will let you know if that is a hit or a miss!

I used grocery store tomatoes and it was still absolutely fabulous. Imagine how good it would be with homegrown or farmer's market tomatoes! My family loves it. I'm going to make it all the time.

Ohhhhh my... I was hesitant to make this, since some of you had written in saying the crust became soggy, but BOY, am I glad I made it anyway! It turned out perfect (and I love when my boyfriend tells me that about my recipe "experiments" like this one! I drained the tomatoes in a collander, but put them on paper towels, changed to a new paper towel after a few minutes, removed that and swished the tomatoes around in the collander to MAKE SURE I got rid of juice....even patted dry before putting them in the crust. Added some REAL italian mozzerella (found in gourmet section of market, packaged in liquid crumbled into tiny bits on top of the basil BEFORE adding the Cheddar/Jack shredded cheese spread (bought wrong bag of mixed cheese, but still was great.... Went a tad bit less on the amount of shredded cheese and mayo, since I did the chunks of mozzerella....MMMMMM.

I've been making this since I first saw Paula prepare it last year. I make it EXACTLY as she does, not changing a thing, and get raves from everyone who tastes it every time I make it. It's simple, delicious, and showcases the excellent flavor of summer tomatoes and basil. I made it for my relatives in Hawaii and they now request it every time they come home!
